Bolillos are one of the most popular breads sold in Mexican bakeries. This bread is baked on the bottom of the oven, to give it a crunchy, thick crust. Puerquitos are fun, piglet-shaped breads made with a piglet-shaped cookie cutter. The main ingredients in this bread are milk, sugar, molasses, and wheat flour.

Sweet Mexican Breads and Pastries

Feite is a sugary bread, made by alternating butter and dough layers. When it is baked, the moisture trapped between the layers fluffs the feite up. Pan fino is always found in a Mexican bakery. This is a cinnamon-flavored, soft bread. It is shaped by hand so comes in all different shapes. It might be frosted or filled with fruit.

Recipe for Authentic Mexican Bolillos

What you will need:

6 cups sifted all purpose flour
1 package active dry yeast
1 teaspoon salt
1 3/4 cups warm water
2 teaspoons white sugar
Oil or melted butter, for greasing
Extra flour, for sprinkling

How to make them:

Combine the sugar with the yeast and then stir in the warm water. Add the salt and then beat in four cups of the flour gradually. Add the rest if necessary, until the dough becomes too stiff for stirring.

Turn it on to a lightly floured cutting board and knead the dough for about ten minutes or until it is smooth. Put it in a lightly greased bowl and turn it so it is greased all over. Cover the bowl with a kitchen towel and let it rise somewhere warm for an hour or until it doubles in size.

Punch the dough down and let it double in size again. Cut it into thirty six pieces and shape each one like a flattish ball with twisted ends. Arrange them a couple of inches from one another on a floured baking sheet and slash the tops using a sharp knife.

Cover them again with a towel and let them double in size again. Preheat the oven to 400 degrees F. Grease the tops of the rolls, using a pastry brush, then bake them for twenty five minutes or until they are golden brown.

Cooking Tips - Pan Frying Chicken

If you are new to cooking chicken or to the pan frying method, you may feel hesitant to try making a pan fried dinner without assistance. Perhaps you have already given it a try but it didn't turn out how you expected. There are a few common mistakes that pan frying novices make, but these are easily remedied with a few simple cooking tips. Knowing these hints to pan frying will help you cook great tasting chicken every time.

Tip #1: Don't turn the stove on high. When pan frying chicken, many people burn the outside breading while the inside remains undercooked. If you've had this problem in the past, the temperature on your stove is too high. Try pouring your oil into the pan and starting with a medium heat. The oil should be heated and should shimmer, but should not smoke. A medium heat around 350 degrees F will allow the chicken to cook longer, heating the inside completely while achieving a golden brown crust.

Tip #2: Pound the chicken to an even thickness before frying. Another common problem is uneven cooking throughout the chicken. With chicken breasts, part of the cut is usually thicker than the other, which causes one end to cook faster and possibly overcook and become dry. To avoid this, pound the thicker part of the chicken so that the thickness is even with the thinner part of the cut. This will ensure that the chicken cooks evenly and remains juicy throughout.

Tip #3: Keep the chicken dry before breading. When you are ready to batter and bread the chicken, first dab your chicken with a paper towel. Removing the excess moisture allows your batter (usually egg) to adhere to the chicken better. When you are ready to bread the chicken, let the excess batter drain from the chicken. Too much egg could cause the breading to fall off in the pan, so allow the egg to just thinly coat the chicken before dipping it in the breading.

Tip #4: Turn the chicken as little as possible. Each time you turn your chicken from one side to the other, you risk disturbing the breading. This could cause the breading on your nicely coated chicken to fall off in the pan. Turning also increases the time it takes for the chicken to cook completely. Turn your chicken at most two times when pan frying to avoid these common problems. If you find yourself turning the chicken more than a couple of times to keep it from burning, your stove temperature is likely too hot. Check the temperature of your oil with a thermometer and adjust it to 350 degrees F if necessary.

Tip #5: Keep space between your chicken. Whenever pan frying chicken, always keep at least an inch of space between the pieces in the pan. If the chicken is crowded, the oil will take longer to heat and may result in soggy, undercooked chicken. The breading on the chicken could also stick together if pieces are touching. Spread your chicken throughout the pan so that oil can heat and cook your chicken from all directions.

Two Sweet Bread Recipes That Are Also Suitable For Diabetics

MOM'S APPLESAUCE BREAD

2 cups all-purpose flour
3/4 cup Equal Sugar-Lite
3 tsp baking powder
3/4 tsp salt
1/2 tsp baking soda
1/2 tsp ground cinnamon
1 1/2 cups no-sugar-added applesauce
1/4 cup egg substitute
2 tbsp light olive oil or canola oil
1/2 cup walnuts or pecans, optional

Preheat oven to 350 degrees. Sift together flour, Equal, baking powder, salt, baking soda, and cinnamon. Beat egg into applesauce and add to dry ingredients. Add oil and mix well. Stir in nuts, if desired. Pour batter into a greased and lightly floured loaf pan or use a non-stick cooking spray. Bake approximately one hour until golden brown.

PUMPKIN LOAF WITH RAISINS AND WALNUTS

1/3 cup nonfat plain yogurt
1 tbsp nonfat sour cream
2 cups canned pumpkin
3/4 cup egg substitute
1/4 cup canola oil
2 cups all-purpose flour
1/2 cup whole wheat flour
3/4 cup Splenda Granular
4 tsp baking powder
1 tbsp pumpkin pie spices
1 cup raisins
1/3 cup chopped walnuts

Preheat oven to 350 degrees. Spray 2 nine-inch loaf pans with non-stick cooking spray. In a large mixing bowl, blend yogurt, sour cream, pumpkin, egg substitute and oil together. Add flour, Splenda, baking powder and pumpkin pie spices. Stir all together, scraping sides of bowl. Mix in raisins and walnuts. Divide the batter evenly and spread into the prepared pans. Bake approximately 45 minutes until toothpick inserted in the center of loaves comes out clean. Cool sligthly in pan then remove from pan and finish cooling on a wire rack.

NOTE: 1/8 of a loaf equals 8 grams of sugar, 28 grams of carbs and 5 grams of protein

Three Traditional Portuguese Recipes

Portuguese cuisine is well known for being comprised of simple, handy ingredients. However, the country's people have an uncanny way of preparing "simple" ingredients in the most delectable ways! Most Portuguese dishes have a particular emphasis on ingredients easily found in local markets, which includes fish, seafood, vegetables, and spices. This article has three great traditional Portuguese recipes that are easy to make and extremely tasty!

Sweet Bread

Ingredients:
1/2 cup lukewarm milk
1 egg
1 tbsp butter
2 1/4 tbsp sugar
1/3 tsp salt
1 1/2 cups bread flour
1 tsp yeast

Pour the yeast into the milk and let it dissolve for a few minutes. In a large bowl, mix together the flour, salt, and sugar. Next, add the milk/yeast mixture, butter, and egg. Mix well. Knead the dough on a floured surface. Once the dough is smooth, place a wet towel over it and allow it to rise for at least an hour. You can place the dough in a greased bread pan, or shape it into a round loaf and bake it on a lightly greased baking sheet. Bake at 350 degrees F for until the bread is light brown. You can test its doneness by sticking a toothpick in the center. If it comes out clean, it's done.

Portuguese Soup

Ingredients:
1 lb Chorizo
1 bunch of kale
1 small cabbage
1 can kidney beans
8 potatoes
Salt and pepper to taste
Beef bone (optional-for flavor)

Directions:
Bring a stock pot full of water to a boil. Add the beef bone and chorizo and let it boil for about half an hour. Add in the kale, beans, potatoes, cabbage, and salt and pepper. Continue to boil the soup until the potatoes are tender. After everything is thoroughly cooked, let the soup stand for an hour (covered) before serving.

Egg Pudding

Ingredients:
1 egg (white only)
12 egg yolks
1/2 tsp butter
1 cup white sugar + 1 1/3 additional cups
¼ cup hot water
Lemon peel
1/2 cup hot water
1 cinnamon stick

Directions:
In a bowl, beat together the egg yolks, egg white, and butter until smooth. Set this aside for later. Heat 1 cup of sugar and 1/4 cup of water over low heat. Stir the mixture occasionally until the sugar has dissolved. Pour it into a baking dish, taking care to coat the bottom and sides of the dish with the mixture. In a separate sauce pan, mix together 1 1/3 cups of sugar, lemon peel, 1/2 cup of water, and the cinnamon stick. Bring this mixture to a boil and continue boiling for two minutes, then remove it from the heat. Remove the lemon peel and cinnamon stick from the mixture. Beat this mixture into the egg mixture, then pour into the baking dish with the sugar/water mixture. Place a damp towel in the bottom of a roasting pan, then put the baking dish on top of the towel. Fill the roasting pan with water until it reaches half way up the side of the baking dish. Bake at 400 degrees F for about an hour. If the pudding begins to brown too early, cover it until it finishes baking. Cool the pudding completely before inverting it onto a serving dish.

Keep It Simple Sunday Brunch Recipes

Night Before Caramel Rolls

Preparation: 20 minutes

Cooking time: 20 minutes

Makes about 12

(Recipe yield two loaves)

Roll Caramel Ingredients:

2 small loaves frozenPasta

½ cup melted butter

1 cup brown sugar

1 package vanilla pudding

2 T. milk
