The Simply Delicious Banana Bread Recipe

There are a number of mouth-watering and easy to make recipes that people can have during breakfast. One such popular dish is the banana bread recipe whose origin lies in Australia. It is quite tasty and does not need much time to prepare. Both children and adults can enjoy this dish during breakfast.

It is also quite popular in continents like North America. But the residents of Australia are really fond of it. The benefit of the dish is that it is filling as well as appetizing. The thick batter that will turn into the bread should be kept in a thick rectangular pan. Generally egg is used for making banana bread but the vegetarian people can use yogurt or tofu.

At first a person needs to mix sugar with butter until the mixture becomes fluffy and light. Thereafter, the mashed bananas need to be added to the mix and stirred so that all the ingredients blend well together. Next, one needs to add the vanilla extract. The eggs need to be beaten in a separate bowl. When it is done, the egg needs to be added to the banana batter. The dry ingredients in the recipe need to be added to the egg mixed batter thereafter.

One need a 9x5 inch sized rectangular baking tray for baking the banana batter properly. The baking tray needs to be well greased with butter. The optimum baking temperature for the banana bread recipe is 350F. One should ideally bake the batter for one hour and should check the progress of baking in the time with the help of a toothpick. After the baking is done one can keep the banana bread on a wire rack. This will make it cool down. The bread can then be sliced with knife and served with tea.

How to Make Nana's Old Fashion Banana Nut Bread

If you want to relive those days of enjoying Banana Nut Bread at Nana's house, this recipe is for you. It is easy to make and taste like Nana's.

NANA'S OLD FASHION BANANA NUT BREAD

Bread Pan

5 tbsp butter
1/2 cup granulated sugar
1/2 cup firmly packed brown sugar
1 large egg
2 egg whites
1 tsp vanilla extract
1 1/2 cups very ripe mashed bananas
1 3/4 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
1/4 tsp baking powder
1/2 cup heavy cream
1/2 cup chopped walnuts

Preheat oven to 350 degrees. Lightly grease a 9-inch loaf pan; set aside.

In a large mixing bowl, with an electric mixer at medium speed, beat butter until light and fluffy. Add granulated sugar and brown sugar beating well. Add egg, egg whites, and vanilla beating until well blended. Add the banana and beat on high speed for about 30 seconds.

In a medium mixing bowl, combine the flour, baking soda, salt, and baking powder. Add the flour mixture to the creamed mixture alternately with the cream, ending with the flour mixture. Stir walnuts into the batter.Pour bread batter evenly into the prepared loaf pan. Bake at 350 degrees about 1 hour and 15 minutes or until a wooden toothpick inserted in the center comes out clean. Cool in the pan on a wire rack for 10 minutes. Remove bread from pan and finish cooling on the wire rack. Slice and serve.

NOTE: Cooled bread can be wrapped tightly in plastic wrap and served the next day. This is also a way to give a good food gift. Wrap in plastic wrap and add a pretty bow that fits the occasion.

Healthy Vegan Banana Bread Recipe

Now that the weather is getting to be a bit cooler, I have a strong urge to be busting out my baking supplies and warming up the oven. Whole Grain Honey Sweetened Banana Bread

A quick search for whole grain banana bread recipes will turn up a few options. All of them seem to just simply swap out the refined white flour for whole wheat. While that does accomplish the goal of eliminating refined grains, it does little for the flavor and texture of the banana bread.

The biggest problem with simply substituting whole wheat for white is that the whole wheat is denser and drier. If you don't take steps to account for that, the banana bread will also be denser and drier. My recipe splits the flour evenly between two whole grains: wheat and oat. The wheat provides a good, strong structure while the oats are softer in both taste and feel.The lack of gluten in oats make them a perfect match for the high gluten wheat. Baking, just like life, is all about balance.

I use honey to sweeten most of my whole grain baked goods. There are two reasons for this. First, I think it is the best sweetener you can use, as far as health and nutrition are concerned. Second, honey is extremely hydroscopic. This means it attracts and traps moisture. This helps your banana bread stay moist.

The third major change in this recipe vs traditional banana breads is the choice of cooking fat. Butter would be the normal standby, and it does give a lovely flavor to baked goods. The problem with saturated fat, when it comes to baking, is that it is solid at room temperature. This is also true once baked. An unsaturated oil stays liquid and adds a moist feel to baked goods. The problem with just substituting vegetable oil is in the flavor; it doesn't offer much. I use walnut oil in my banana bread. In addition to being loaded with heart healthy omega-3s, the flavor goes incredibly well with bananas.

Ingredients

1 cup of whole wheat flour

1 cup of whole grain oat flour

1 teaspoon of baking soda

1/2 teaspoon of sea salt

1 teaspoon of cinnamon

1/4 teaspoon of freshly grated nutmeg

3 large or 4 medium very ripe bananas

1/2 cup of walnut oil

2 large eggs

1/2 cup of honey

2 teaspoons of pure vanilla extract

1/4 cup of walnuts, roughly chopped

Directions

Heat oven to 350 degrees F. Grease a 9 x 5 loaf pan and set aside.

Put the wheat flour, oat flour, baking soda, salt, cinnamon and nutmeg into the work bowl of your food processor fitted with a multipurpose blade. Pulse several times to combine and aerate. Transfer to a large mixing bowl.

Put the bananas into the work bowl of your food processor fitted with a multipurpose blade. Process until well puréed. Add the walnut oil. Pulse a few times until combined. Add the eggs, honey and vanilla. Pulse until combined. Turn the food processor to "on" and let run for 3 minutes.

Add the banana mixture to the mixing bowl with the dry ingredients. Stir until just barely combined. Too much stirring will over-develop the gluten and result in a tough bread.

Transfer the batter to the loaf pan and top with the chopped walnuts. Bake until a toothpick inserted in the center comes out clean, about 1 hour. Allow to cool completely before serving.

The Best Banana Nut Bread

I have made this banana nut bread ever since my husband and I got married. I have had great compliments on it every year. Everyone wants to know how I make it so moist. The secret to keeping banana nut bread moist is freezing the bananas ahead of time. We eat bananas throughout the year, but when they start to turn almost black and get over ripe, I put them in the freezer. By the time Thanksgiving and Christmas get here, I have tons of bananas to make a lot of bread!

Best Banana Bread Recipe

Bread Pan

1 cup natural dehydrated cane sugar
1/3 cup butter, softened
2 eggs, from happy pastured hens
1 1/2 cups frozen bananas, mashed (about 3-4)
1/3 cup water
1 2/3 cup flour
1 teaspoon baking soda
1/2 teaspoon sea salt
1/4 teaspoon baking powder
1/2 cup chopped walnuts or pecans

Preheat oven to 350°. Grease the bottom and sides of a bread pan with lard.

Step 1: Using a mixer, mix sugar and butter together until creamy. Then stir in the eggs. Add bananas and water and beat until thoroughly mixed.

Step 2: In another bowl, stir together the flour, baking soda, sea salt and baking powder. Using a wooden spoon, stir this mixture into the egg mixture a little at a time until it is all moistened. Stir in the nuts.

Step 3: Pour into the bread pan and bake about 1 hour. When you can insert a knife or toothpick in the center and it comes out clean, it is done. Loosen the sides from the pan with a butter knife and flip over onto a cooling rack. Cool completely before slicing.

This recipe makes 1 loaf. So save plenty of bananas all year long, because everyone will ask for more!

All-Bran Banana Bread is a Real Homemade Treat

With rich, sugar-consuming desserts off the list for the duration, women are wondering how they are going to give their meals that extra something that satisfies. One answer is with homemade bread and muffins. When golden brown muffins or fragrant, freshly baked bread are served, no other dessert is necessary.

Fortunately, most of today's tastiest breads are quick bread, which means that they can be turned out in an hour or so. Secondly, they can be piled full of nutrition by using bran or whole grain flours; by adding nuts and dried fruits, and by serving with fresh, creamy dairy butter.

All-Bran Banana Nut Bread

1/4 cup shortening
1/2 cup sugar
1 egg
1 cup bran cereal
3/2 cups mashed bananas
1 teaspoon vanilla extract
1/2 cups flour
2 teaspoons baking powder
1/2 teaspoon each, salt and soda
1/2 cup chopped nut meats

Blend shortening and sugar thoroughly; add egg and beat well. Add bran cereal, bananas and flavoring. Sift flour, baking powder, salt and soda together; add to first mixture with nut meats, stirring only until flour disappears. Bake in greased leaf pan (4.5 by 8.5 inches) with waxed paper in bottom, in moderate oven (350 degrees F.) about 1 hour.

Whole Wheat Prune Bread

1 cup sifted enriched flour
1 teaspoon baking powder
5/4 teaspoons baking soda
1 teaspoon salt
1/2 cup sugar
2 cups whole wheat flour
1 cup chopped cooked prunes
2 cups sour milk or buttermilk
1/2 cup molasses

Mix and sift enriched flour, baking powder, soda, salt and sugar; stir in whole wheat flour and prunes. Combine sour milk and molasses; add to flour mixture, stirring only until well mixed. Turn into greased loaf pan, 9x5x3 inches, and bake in moderate oven (350 degrees F.) about 1 hour.

Apple Corn Muffins

3/4 cup sifted flour
3/4 cup cornmeal
3 teaspoons baking powder
1/8 teaspoon salt
3/2 tablespoons sugar
1 egg, slightly beaten
3/4 cup milk
2 tablespoons shortening, melted
3/4 cup finely diced apple

Mix and sift dry ingredients. Combine egg and milk, and add to flour mixture, stirring only until well mixed; stir in shortening and apple. Turn into greased, shallow pan or muffin pans and bake; in pan in hot oven (400 degrees F.) about 30 minutes; in muffin pans in hot oven (425 degrees F.) about 20 minutes. Makes 8 portions, or 8 medium-sized muffins.

All-Bran Cream Scones

2 cups flour
4 tablespoons baking powder
1/2 teaspoon salt
1 tablespoon sugar
1/2 cup bran cereal
1/4 cup butter
2 egg
1/3 cup cream or top milk

Sift flour with baking powder, salt and sugar; add bran cereal. Cut in butter with pastry blender. Reserve small portion of egg white; beat remaining eggs and add to first mixture with cream. Stir until dough is formed. Toss on floured board, knead slightly and roll out to 3/4 inch thickness. Cut in triangle shapes; brush with egg white mixed with 1 teaspoon water, sprinkle with sugar and bake in hot oven (425 degrees F.) about 15 minutes. Makes 12 scones.

It's pleasant fruity aromas filled the house and bring every one to the kitchen asking, is it done yet? Enjoy it warm, cold or even toasted.

Banana bread first made it's way in to cookbooks in the 1930's. Shopkeepers and grocers would have recipes available for shoppers when they had too ripe fruit on their shelved to try to make a sale for the product before it hit the trash bin. With the resurgence of home baking in the 1960's it regained the popularity it once had. Unlike some other recipes it was straight forward and required very little skill to create.

The following recipe will make the moistest Banana Bread you have ever tasted. It's easy and takes no special ingredients. For best results use very ripe bananas. Be sure there are brown spots all over the peels and mash them well.

Ingredients:

1- 1-1/2 cups mashed ripe bananas, about 3-4 bananas
1/2 cup melted butter
1 cup granulated sugar
1/4 cup milk
2 cups all-purpose flour
1-1/2 tsp baking powder
1 tsp baking soda
1 tsp salt
2 large eggs
1 tsp vanilla extract
1/4 cup milk

1. Preheat oven to 350 degrees. Prepare greased 9 x 5 x 3 bread pan.

2. In a bowl, combined mashed bananas, butter, sugar and 1/4 cup milk. Mix to combine.

3. In a large bowl, sift together flour, baking powder, baking soda and salt. Add in the banana mixture. Beat with an electric mixer on medium speed for about 2 minutes. Add eggs, vanilla extract and 1/4 cup milk. Beat for about 1 minute on medium speed.

4. Pour batter evenly into the greased pan. Place pan in oven on the middle rack. Bake for 30-40 minutes or until toothpick or knife inserted in the middle of the bread comes out completely clean.

5. Remove from the oven and let it cool for 10 minutes, then remove from pan and let cool completely on wire rack.

For this recipe you can also use a 9 x 13 cake pan.

To add a different flavor use raisins or add pecan or walnuts. For the chocoholic try adding chocolate chips. Top with powder sugar or a cream cheese frosting.

If you have ripe bananas but have no time for baking, they can be frozen in a brown paper bag.

For the quinoa banana bread you will need:

1/3 cup quinoa flakes,
2/3 cup quinoa flour,
2 eggs,
1/2 cup blond cane sugar,
1/2 cup white rice flour,
2 oz coarsely chopped chocolate,
1 teaspoon baking powder,
1/2 teaspoon baking soda,
1/2 teaspoon ground cinnamon,
1/2 cup chopped walnuts,
7 tablespoons butter (melted and slightly cooled) and
2 ripe bananas.

For this banana quinoa how to recipe, you can add Macoun apple if you want. Preheat the oven at 350 F and grease a loaf pan, coat it with flour and tap the excess out, set the pan aside. Banana Bread - Low-Carb Recipe

 

Banana Bread - Low Carb

Bread Pan

1 cup butter

1 cup Splenda

5 eggs

1 tsp baking powder

2 tsp banana extract

2 cups almond meal -- flour

Instructions:

1) Cream butter and Splenda.

2) Add eggs one at a time beating after each egg.

3) Mix flour with baking powder and add egg mixture a little at a time while beating.

4) Add extract. Pour into a small loaf pan.

5) Bake at 350 degrees for 35-45 minutes.

6) Check with toothpick at 35 minutes.

Per Serving: 259 Calories

Banana Cinnamon Swirl Bread - Low-Carb

Serving Size: 8

6 egg yolks

6 egg whites

1/2 tsp cream of tartar

2 tbl Splenda

1/3 cup Atkins Bake Mix, or soy flour

2 tbl Splenda

1-1/2 tsp banana extract

1 tsp vanilla

1 tbl chopped peanuts, finely chopped

1-1/2 tsp Splenda

1-1/2 tsp cinnamon

Instructions:

1) Separate the eggs, put the whites in a large mixer bowl with the cream of tartar and 2 tbl Splenda.

2) Whip the whites until stiff, but not dry peaks form. Set aside.

3) In a seperate bowl, beat the yolks with the remaining 2 tbl Splenda and the extracts.

4) Stir in the bake mix and the nuts.

5) Add a heaping ladle of whites to the yolk/bake mix mixture, stir until well blended and a fairly thin batter.

6) Pour this batter into the whites and gently fold in until well combined. Be careful not to break down the volume of the whites.

7) Spray a loaf pan and spoon in 1/2 the batter; sprinkle on 1/2 the splenda/cinnamon mix.

8) Spoon the rest of the batter on top, sprinkle on the remainer of the Splenda/cinnamon.

9) Place in a preheated 350°F (180°C) oven and bake for about 28 minutes.

10) Cool almost completely in the pan, remove and finish cooling on a rack.

11) Slice into 8 slices and store in a covered container in the fridge. Separate the slices with wax paper.

Per Serving: 69 Calories

The Famous Banana Bread

Bread is one of the most eaten forms of food in the whole world and the Banana bread is one of the most famous varieties. Banana bread as the word implies, has bananas in it. It is usually moist, sweet and has a cake-like texture. It is considered a quick bread because it is easy and fast to prepare, just combine all the ingredients, mix them and "Viola!" it is ready to be baked. No one really knows where the banana bread originated or who invented it, but people speculate that it was created in the 18th century by housewives who were trying out the different uses of pearlash. During the 1960's when the home baking was revived, the banana bread suddenly became very popular. It was featured in almost every cookbook because of its simplicity in preparation; it can even be baked or cooked in a Zojirushi bread machine!

Here's a simple Banana Bread recipe that anyone can enjoy.

Bread Pan

Ingredients:

1 3/4 cups of all purpose flour
¾ cup of sugar (white)
1 teaspoon of baking powder
¼ teaspoon baking soda
¼ teaspoon salt
1 teaspoon ground cinnamon
2 large eggs
½ cup melted butter
3 large bananas, mashed very well
1 teaspoon vanilla extract

Procedure:

Oven should be preheated to 350 degrees Fahrenheit or about 180 degrees Celsius. Spread some butter and flour to baking pan and set it aside. Mix flour, sugar, baking powder, baking soda, salt, and cinnamon in a large in a large bowl and set aside. These will be the dry ingredients.

In a separate bowl, mix the melted butter, mashed bananas, eggs and vanilla. Using a rubber spatula or wooden spoon, lightly fold this mixture to the dry ingredients. Fold until the combined batter is thick. Do not over mix because this will result into hard and chewy bread. Pour mixture into the baking pan and bake until the bread is golden brown. To be sure that the bread is cooked, stick a toothpick into it and if the toothpick comes out clean, the bread is done. Let the bread cool for a while then remove it from the pan. Serve while warm to enjoy the full freshness of the bread or if you intend it to be eaten at a later time, freeze the bread. This recipe can make a loaf measuring 9 x 5 x 3 inches.

Extra Moist Banana Pineapple Bread Recipe For Those Craving a Tropical Taste

2 3/4 cups of White Flour
1 3/4 cups of Sugar

3/4 cup of Vegetable Shortening
1/4 cup of Yogurt

This recipe makes just enough batter for standard sized loan pans. If you just need to make one loaf of banana pineapple bread instead of two, just adjust the ingredient amounts accordingly.

Recipe Directions:

1. Set your oven to 375 degrees.

2. In a mixer, add the sugar, ginger, vegetable shortening, and salt. Mix until the batter is creamy.

3. Add the eggs and mix.

4. Add the yogurt, buttermilk, flour, and baking soda and mix until batter is a smooth consistency.

5. Take the ripe bananas and mashed them up in a bowl. Place in mixer along with walnuts.

6. Drain juice from pineapple chucks and add to mixer. Mix up the batter one last time.

7. Grease up your loaf pans and dust some flour over them (this is done to keep the bread from sticking to the sides and bottom of the pan).

8. Pour batter into both loaf pans. Place in the oven for 45-50 minutes.

9. To tell if the banana pineapple bread is done, just stick a toothpick in it. When it comes out without any batter, then its safe to take the loaves out of the oven.

9. Let the bread loaves stand for thirty minutes to cool off.

How to Make Nana's Old Fashion Banana Nut Bread

If you want to relive those days of enjoying Banana Nut Bread at Nana's house, this recipe is for you. It is easy to make and taste like Nana's.

NANA'S OLD FASHION BANANA NUT BREAD

5 tbsp butter
1/2 cup granulated sugar
1/2 cup firmly packed brown sugar
1 large egg
2 egg whites
1 tsp vanilla extract
1 1/2 cups very ripe mashed bananas
1 3/4 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
1/4 tsp baking powder
1/2 cup heavy cream
1/2 cup chopped walnuts

Preheat oven to 350 degrees. Lightly grease a 9-inch loaf pan; set aside.

In a large mixing bowl, with an electric mixer at medium speed, beat butter until light and fluffy. Add granulated sugar and brown sugar beating well. Add egg, egg whites, and vanilla beating until well blended. Add the banana and beat on high speed for about 30 seconds.

In a medium mixing bowl, combine the flour, baking soda, salt, and baking powder. Add the flour mixture to the creamed mixture alternately with the cream, ending with the flour mixture. Stir walnuts into the batter.Pour bread batter evenly into the prepared loaf pan. Bake at 350 degrees about 1 hour and 15 minutes or until a wooden toothpick inserted in the center comes out clean. Cool in the pan on a wire rack for 10 minutes. Remove bread from pan and finish cooling on the wire rack. Slice and serve.

NOTE: Cooled bread can be wrapped tightly in plastic wrap and served the next day. This is also a way to give a good food gift. Wrap in plastic wrap and add a pretty bow that fits the occasion.

Whole Wheat Chocolate Banana Bread

I am a bread lover and I always have bread as my breakfast and lunch. Sometime a bread also is a snack for me.

My favorite bread is whole wheat chocolate banana bread. I'm on diet so whole wheat bread always is my choice. Besides that whole wheat bread is a healthy food too. I love the taste of combination of the chocolate and banana. Because of this, whole wheat chocolate banana bread becomes my favorite bread.

Bread Pan

It is also easy to make a whole wheat chocolate banana bread too. Here is the recipe:

First let's talk about the ingredients:

1/3 cup skim milk
1 3/4 cups whole wheat flour
1/2 cup unsweetened cocoa powder
2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1/2 teaspoon salt
2 large eggs
3/4 cup white sugar
3 ripe bananas, mashed
1 tablespoon canola oil
1 teaspoon vanilla extract

You may change the ingredients according to your favorite.

Steps to make the Whole Wheat Chocolate Banana Bread:
Preheat oven to 375 degrees F/190 degrees C. Spray a loaf pan with cooking spray. Whisk together the whole wheat flour, skim mil, cocoa powder, baking power, baking soda, cinnamon, nutmeg, and salt. Set aside. Beat eats and sugar together with an electric mixer until smooth. Mix in the mashed bananas, the milk mixture, canola oil and vanila extract. Stir the flour mixture until all the ingredients are moistened. Pour batter into the prepared pan. Bake it in the preheated oven about 1 hour for a loaf. Cool in the pan for 10 minutes before removing to coll completely on a wire rack. Finally you can test your homemade Whole wheat chocolate banana bread!

Banana Bread Recipes For Diabetics

Back-to-school and the upcoming fall season call for bringing out fruit bread recipes. Following are some recipes for banana breads and muffins. All are suitable for diabetics.

BANANA-ZUCCHINI BREAD

Bread Pan

1 cup egg substitute
2 cups Equal Sugar-Lite
3/4 cup canola oil
1/4 cup unsweetened applesauce
2 medium sized ripe bananas, mashed (1 cup)
2 cups all-purpose flour
1 cup whole-wheat flour
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1 1/2 tsp ground cinnamon
1/2 tsp salt
1 1/2 cups shredded unpeeled zucchini
1 cup chopped pecans

In a large mixing bowl, beat eggs. Blend Equal, applesauce and oil into eggs. Add banana and mix well. Combine flours, baking powder, baking soda, cinnamon and salt. Stir flour mixture into egg mixture. Stir in zucchini and pecans just until combined. Pour mixture into two greased 9-inch loaf pans. Bake at 350 degrees for 50 minutes or until a toothpick inserted in the center comes out clean. Cool in pan 10 minutes. Remove from pans and cool completely on wire racks.

BANANA NUT BREAD

3 large well-ripened bananas
1 egg or 1/4 cup egg substitute
1/2 cup sugar-free applesauce
1/3 cup low-fat milk
1/3 cup sugar or Splenda for Baking
1 tsp. salt, optional
1 tsp. baking soda
1/2 tsp. baking powder
1 cup all-purpose flour
1/2 cup whole-wheat flour
(or you can use 1 1/2 cups all-purpose flour)
1/2 cup chopped walnuts or pecans

Preheat oven to 350 degrees. Mash bananas with a fork. Add egg, applesauce, milk, sugar or Splenda, salt, baking soda and baking powder to bananas. Mix well with fork. Slowly stir in the flour. Stir only until flour is moistened. Fold in chopped nuts. Lightly grease a loaf pan with cooking spray. Pour batter into pan. Bake 45 minutes or until a toothpick inserted near center comes out clean. Cool in pan for 5 minutes before removing to a cooling rack.

BANANA CHOCOLATE CHIP MUFFINS

3-4 large bananas, ripe and mashed
3/4 cup Splenda granular
1/4 cup egg substitute or 1 egg
1 1/2 cups flour
1 tsp baking soda
1 tsp baking powder
1/4 tsp salt, optional
1/3 cup butter, melted
1/4 cup mini chocolate chips

Preheat oven to 375 degrees. In a large mixing bowl, blend together bananas, sugar and egg or egg substitute. Add flour, baking soda, baking powder and salt. Blend well. Stir in the butter and chocolate chips. Fill paper-lined muffin tins 2/3 full. Bake at 375 degrees for 15-20 minutes.

Banana Bread Is So Easy See Amaryllis Of Hawaii Loves To Cook By Marilyn Jansen

Amaryllis starts with seven ripe bananas mashed into a bowl. She sifts flour, baking soda, cinnamon and salt into a bowl. She creams together butter and sugar, adds a 1/4 cup of honey and a tsp. of vanilla to the butter mixture, then adds the lightly beaten eggs. She combines the wet and dry ingredients and adds a cup of chopped walnuts, a cup of raisins stirred in at the end, and pours the batter into 2 oiled loaf pans, or several mini loaf pans to bake at 350 degrees 45-60 minutes until done! Sometimes she adds yogurt or 1/2 cup sour cream to the mixture. Many quick breads, like pumpkin bread and zucchini bread, are done this way. It's so easy!

7 ripe mashed bananas

2 & 1/2 cups flour

2 tsp. baking soda

1 tsp. salt

1 tsp. cinnamon

2 sticks butter at room temperature

1 & 1/2 cups sugar

1/4 cup honey

4 eggs, lightly beaten

1 tsp. vanilla

1 cup crushed walnuts

1 cup raisins

Banana Pancakes

Anyone can make beautiful banana pancakes.

Use fresh flour and baking powder. Sift dry ingredients.

1 & 1/2 cups flour

1 cup milk

3 tbsp. sugar

1 tsp. vanilla

2 tsp. baking powder

2 bananas, sliced

1 tsp. salt

2 eggs

Mix wet into dry ingredients just until blended. Add bananas and ladle onto a hot oiled griddle or pan. You know it's hot enough when a drop of water bounces off the pan.
Let bubbles appear on the pancakes before you flip them.
Drizzle with syrup and dust with powdered sugar.
Try blueberries, apples, peaches, or mango in pancakes or wrapped in crepes!

Basic crepe batter
2 eggs

1/2 cup flour

2/3 cup milk

1/4 tsp. salt

1 tbsp. oil

Lightly beat the eggs, stir in milk & oil, gradually stir in flour and salt. Beat until smooth. Cover and refrigerate 2 hours.
Brush a 7-inch crepe pan with oil and heat until hot. Stir batter, add scant 2 tbsp. batter to pan & quickly tilt to cover bottom of pan. Cook crepe, turning over until lightly browned on both sides. Makes 12

How To Make Low GI Banana Bread

As far as low gi banana bread recipes go, this one is my favorite. It is the perfect snack for those early evening cravings and it also goes great with a cup of tea or a cold glass of milk. You can spread a slice with a small amount of non-hydrogenated margarine, but I find a warm slice of this bread is excellent on its own.

Ingredients

1 1/2 cups whole wheat flour

3/4 cup ground flaxseed

2 tsp baking powder

1 tsp baking soda

1 tsp cinnamon

1/2 tsp salt

3 very ripe, medium bananas, mashed

6 tbsp SPLENDA® brown sugar blend

3/4 tbsp lemon juice plus enough skim milk to make 3/4 cup (or use 3/4 cup buttermilk)

4 egg whites

1 tsp vanilla

3/4 cup chopped walnuts

Directions

Preheat oven to 350 degrees. Spray loaf pan with non-stick spray. Measure 1 tbsp lemon juice (freshly squeezed is best) into a measuring cup and pour in skim milk for a total of one cup. Do not stir. Allow to sit for 5 minutes. Alternatively, you can simply use 1 cup of buttermilk if you have this ingredient on hand.

In a large bowl, blend flour, flaxseed, baking powder, baking soda, cinnamon and salt and set aside.

Beat egg whites and sugar. Add bananas and vanilla and beat lightly.

Pour wet ingredients into dry ingredients and combine until well mixed. Add walnuts and stir until combined.

Pour mixture into loaf pan and bake 40 to 50 minutes.

Vintage Recipes For Delicious Gift Breads - Banana Walnut Bread and Rhubarb Bread

One of the great things about grandma's house was always the selection of delicious treats to be found in her kitchen. Whether it was meal time or we just wanted a snack, there was always something delicious available. And one of those "always available" items was bread. Grandma cooked on an old cast iron wood stove that had a warmer section. There were always biscuits and breads in the warmer section. Here are a couple of sweet breads from my vintage recipe collection that remind me of grandma. Banana Walnut and Rhubarb breads are both tasty treats you should share with your family and friends. They will love you for it and both breads are really easy to make.

VINTAGE BANANA WALNUT BREAD

1 cup sugar

1/2 cup shortening

2 tbsp milk

1 tbsp vinegar

1 cup chopped walnuts

3 very ripe crushed bananas

1/4 tsp salt

1 tsp soda

2 cups flour

Preheat oven to 350 degrees.

Combine all ingredients and bake in greased loaf pan for 50 to 60 minutes.

RHUBARB BREAD

3/4 cup white sugar

3/4 cup brown sugar

2/3 cup salad oil

1 egg

1 cup sour milk*

1 tsp salt

1 tsp soda

1 tsp vanilla

2 1/2 cups flour

1 1/2 cup diced rhubarb

1/2 cup chopped nuts

Preheat oven to 325 degrees.

Mix ingredients in the order listed above. Mix well and pour into two greased loaf pans and sprinkle over batter a mixture of 1/2 cup sugar, 1 tablespoon butter and 1/2 teaspoon cinnamon. Bake at 325 degrees for 60 minutes. Freezes well. Makes 2 loaves.

*Sour milk is buttermilk. If you do not have buttermilk on hand, you can substitute 1 cup of regular milk with 1 tablespoon of lemon juice or vinegar mixed in.

vintage recipes for the gift of delicious breads - Banana Walnut Bread and Rhubarb Bread

One of the great things her grandmother has always been the choice of specialty is in the kitchen. Whether it's dinner time, or just wanted a snack, there was always something tasty available. There were always biscuits and sandwiches in the area warmer. Here are a couple of sweet breads from my vintage recipe collection that remind usmy grandmother. Banana Walnut Bread and Rhubarb are both addresses, you need to share with family and friends. Will love for her and the two breads are really easy to do.

VINTAGE Banana Nut Bread

1 cup sugar

02:01 Cup shortening

2 tablespoons milk

1 tablespoon vinegar

1 cup chopped walnuts

3 ripe bananas, mashed

4.1 V. teaspoon salt

1 teaspoon baking soda

2 cups flour

Preheat oven to 350 degrees.

Mix all ingredients and bakegreased bread for 50-60 minutes to cook.

Rhubarb BREAD

04:03 cup white sugar

04:03 cup brown sugar

03:02 cup salad oil

1 egg

1 cup sour milk *

1 teaspoon salt

1 teaspoon baking soda

1 teaspoon teaspoon vanilla

2 1 / 2 cups flour

1 1 / 2 cup diced rhubarb

Cup chopped walnuts 02:01

Preheat oven to 325 degrees.

Mix ingredients in order listed above. Mix well and pour into buttered bread dough and two molds, sprinkle with a mixture of 1 / 2 cupSugar, 1 teaspoon butter and 1 / 2 teaspoon cinnamon. Bake at 325 degrees for 60 minutes. Freezes well. For 2 loaves.

* The milk is acidified buttermilk. If you do not have buttermilk on hand, you can mix 1 cup milk 1 tablespoon lemon juice or vinegar to regularly pay
