Simple Lemon Cordial Recipe

Lemon cordial is a lovely refreshing summer-time soft drink. It is simple to prepare and requires no artificial preservatives so long as you sterilise the finished cordial in its bottles. You can use up lemons when they are plentiful and provide yourself and family with a healthy drink all year around. Here's how to make simple lemon cordial.

Ingredients

Lemons
Sugar

Method

Juice as many lemons as you can (or dare)
Put the juice into a measuring jug to determine how much sugar to use
For every litre of juice you will need 1.2 kilos of sugar
Put the juice and sugar into a large pan and heat very gently
Stirring continually heat till the sugar is completely dissolved

The cordial is now ready to use - simply add water and ice. Add as much or little water as you like. If you would like to preserve the cordial for future use you can by following the steps below:

Canning the Cordial

Select bottles or jars with screw top lids. Bottles look prettier but small jars may be easier to get hold of
Wash the bottles (or jars) and immerse in boiling water for 15 minutes
Drain the bottles and fill with warm cordial (leave 1/2" space at the top for expansion)
Screw the caps on tightly then undo by half a turn to allow for expansion
Place a clean cloth in a large pan and place the bottles in the pan (packing with cloths to keep the bottles from knocking each other if necessary)
Fill the pan with warm water that comes up at least 3/4 of the way up the bottles
Slowly heat the pan till the water is boiling
Boil for 30 minutes
Remove the bottles and screw up the caps tightly
Store somewhere cool, dry and dark for year round lemon cordial (once opened store in the refrigerator)

It is very simple and is a great way to use up surplus citrus fruits.

Milk Chocolate Fudge Recipe - Easy Milk Chocolate Fudge

Here is a great tasting chocolate chip fudge recipe that's as easy as pie to make. Whip up a batch of this chocolate fudge when you need to make a quick dessert.

2 (6 oz.) packages semisweet chocolate chips

1 (6 oz.) package milk chocolate chips

1 (14 oz.) can sweetened condensed milk (do not use evaporated milk)

1/2 to 1 cup nuts, chopped

1 1/2 teaspoon vanilla extract

Directions

Line an 8-inch or 9-inch square baking pan with wax paper.

In a heavy saucepan, cook chocolate chips and milk over low heat until thoroughly melted. Remove pan from heat. Stir in the nuts and the vanilla. Spread fudge pan and chill in the refrigerator for 2 hours, or until firm.

Cut into squares before serving.

Kids especially love this marshmallow fudge and this recipe can be a delicious treat to make on a weekend or for a bake sale.

2 1/4 cup granulated sugar

1/2 cup evaporated milk

2 cups miniature marshmallows

1/4 cup butter

1/4 teaspoon salt

1 cup chocolate chips

1 cup pecans, chopped (optional)

1 teaspoon vanilla

Directions

Grease a 9-inch square baking pan.

In a 3-quart saucepan, combine the sugar, milk, marshmallows, butter and salt. Cook over low heat - stirring constantly - until the mixture bubbles. Reduce the heat to a low setting and cook for another 5 minutes until the marshmallows are melted; stir constantly. Remove pan from heat.

Stir in the chocolate chips, pecans and vanilla. Cook and stir until the chocolate chips are melted and all is well blended.

Pour fudge mixture into baking pan. Chill in the refrigerator for 30 minutes, or until firm. Cut into Squares before serving.

This is a great fudge recipe to make for the holidays. Since this recipe involves layering of fudge, you might want to cook the chocolate layer in 2 separate batches instead of one batch (which might cool down too much for easy use).

1 (12 oz.) package semisweet chocolate chips

1 (14 oz.) can sweetened condensed milk (do not use evaporated milk)

6 oz. white chocolate

2 teaspoon vanilla

1 tablespoon peppermint extract

Green food coloring

Directions

Line wax paper in an 8x8-inch baking pan.

In a saucepan, combine 1 cup of milk and the chocolate chips; stir over low heat until melted. Stir in the vanilla. Pour 1/2 of the mixture into the prepared baking pan and let cool for 10 minutes.

In another saucepan, cook the white chocolate and remaining milk over low heat until chocolate is melted. Stir in the peppermint and green food coloring. Spread into baking pan over first layer. Let cool 10 minutes.

Pour remaining chocolate mixture into baking pan over the mint layer. Let cool. Cut into squares before serving.

Looking For a Great Italian Meatball Recipe?

Looking for a great Italian meatball recipe? Wrap your lips around this one.

This recipe was given to my by my 105 year old Sicilian great-grandma. This is the real deal.

The Best Meatball Recipe

Can be prepared in 45 minutes or less.

Ingredients

1 pound combined beef, veal, pork (must be fresh)

3 large eggs

1 cup grated Romano Locatelli Cheese

1 cup bread crumb

1 clove garlic - minced

1 teaspoon salt

Preparation

(All mixing is done be hand)

In a large bowl mix beef/veal/pork with eggs. Then add bread crumb, cheese, and salt. Finally add minced garlic in stages. Add a little garlic, then mix. Add some more, then mix. This way all the garlic does not end up in one meatball. Now, it's time to roll up the balls. Average size is roughly 2 inches in diameter. I usually get around 18 to 20
meatballs per pound.

IMPORTANT! Do not cook meatballs in your pasta sauce! Meatballs cooked in sauce loose their flavor. The real key to a tasty meatball is cooking the them in an oven. So, heat oven to 375. Place meatballs on a rack - then on a cookie tray.

Bake for 12 minutes on one side then 10 minutes for the other.

BEWARE If you choose to fry your meatballs make sure you are alone. The aroma is so overwhelming that anyone in smelling distance will be steal your meatballs right out of the frying pan.

I freeze the meatballs in plastic bags and take out what I need per dinner. I just drop the meatballs into the sauce as if heats up.

Fun Breakfast Recipe - Bubble Loaf

This breakfast recipe is gooey but tasty and can be a lot of fun to make. It was always a challenge for mom to keep us from picking, prodding, and poking at this fun breakfast treat while the bread dough was rising. And even more of a challenge to keep us from burning our hands and mouths on it after this sticky, gooey treat came out of the oven. It gets its name from the fact that the pieces you put into it look like bubbles. It is a good recipe to make for brunch since the dough takes some time to rise.

Bubble Loaf

Bread Pan

2 loaves partially frozen bread dough
1/2 cup sugar
2 teaspoons cinnamon
1 package butterscotch pudding
1/2 cup brown sugar
1/2 cup butter

Mix together the sugar and cinnamon in a small bowl and set aside. Mix together the butterscotch pudding and brown sugar and set aside. Cut each loaf into 2 pieces. Cut 2 pieces lengthwise again. Cut each strip into small pieces. Roll each piece into the sugar and cinnamon mixture. Pile (toss, throw - this is where it can get fun) all of these pieces into a well-greased bundt or solid tube pan. After all pieces are in the pan, take the butterscotch pudding and brown sugar mixture and sprinkle it over the bread dough pieces. Melt the butter and drizzle over the bread dough, pudding, and sugar mixture. Cover the pan with wax paper and a towel and let rise for 1 1/2 hours. Bake at 350 degrees for 25 to 30 minutes. Allow to cool for a while, turn over pan, and shake the bread out.

For making this into a quicker breakfast recipe: If you don't want to have to wait for it to rise, substitute 3 cans of buttermilk biscuits (10 to a can) for the bread dough. You'll also need to increase the cooking time to 30 to 35 minutes.

Kids can have fun helping with this breakfast recipe. Even really little ones can have fun rolling the pieces in the cinnamon and sugar and tossing them into the pan. Hopefully most of them will hit the pan! You can also make it into a race; who can roll the most pieces. And for little ones learning to count, you can make it a learning experience by counting the number of pieces you put into the pan.

Fried Potato Recipe

This spicy fried potato recipe can be used for making a morning snack for breakfast in combination with a bread or paratha. The spices used in this recipe are in crushed form which gives a slightly enhanced flavor when mixed with potatoes. In this recipe tomato can also be added with potatoes which will result in sour taste and will become even more tasty. But the the fried potato will not remain crispy when cooked with tomatoes - that is why I prefer to make these fried potatoes without it. Anyway, if you really want to add tomatoes, add them after onions have been half cooked. The preparation time for this spicy fried potato is just 20 minutes and is served for 3-4 persons.

Ingredients:

5 medium size potatoes (cut into tin slices)
2 medium size onions (finely chopped)
1 tbsp crushed red chili
1 tbsp crushed cumin
1 tsp crushed black pepper
Salt to taste
1/2 cup mustard oil

Cooking Instructions:

Take a frying pan, heat oil and fry potatoes in it on medium heat for 8-10 minutes until all the potatoes become completely soft and a bit crispy. You have to stir constantly while frying so that the potatos fry evenly and would not stick into the pan. After that add onions and fry with potatoes till they become light golden in color and keep stirring during frying. Now add all the crushed spices, red chili, cumin, black pepper, salt and cook for 2-3 minutes more so that all the flavors of spices absorb in the potato. Now its time to turn off the flame and then drain out the excess oil using a strainer. Your Spicy fried potato dish is ready to be served with paratha or flat bread.

Recipe For Quinoa Applesauce Bread - You Can Use it For Your Candida Diet

First of all, prepare all the ingredients: 1 and 1/2 cups applesauce, room temperature or slightly warmed; 3/4 tsp vitamin. Preheat oven to 400 degree, and oil and flour 8x4 inch loaf pan. You combine applesauce and vitamin C crystals, stir them to dissolve. In separate bowl, combine flour and starch. Whisk in baking soda, salt,
stevia powders, and cinnamon, mix them well. Add the a.j. concentrate and the oil to the applesauce. Whisk them together and pour into dry ingredients, mix well and stir in walnuts. Quickly scrape batter into pan. Put in oven and reduce oven temperature to 350. Bake 55-60 minutes.

If you don't have stevia, you can leave that out. Then top the bread with applesauce before eating it, for a sweeter flavor.

You can get vitamin C crystals from your local health store. They may have to order them for you. They have no sugar on them. They have a bitter taste, but some use them as a vinegar substitute. You can use them in cooking.

The Simply Delicious Banana Bread Recipe

There are a number of mouth-watering and easy to make recipes that people can have during breakfast. One such popular dish is the banana bread recipe whose origin lies in Australia. It is quite tasty and does not need much time to prepare. Both children and adults can enjoy this dish during breakfast.

The optimum baking temperature for the banana bread recipe is 350F. One should ideally bake the batter for one hour and should check the progress of baking in the time with the help of a toothpick. After the baking is done one can keep the banana bread on a wire rack. This will make it cool down. The bread can then be sliced with knife and served with tea.

Delicious Blueberry or Berry Fruit Bread Pudding Dessert Recipe

If you are tired of berry pies or just want to include more fresh healthful blueberries in your diet here is a fresh recipe idea, and it is so simple to prepare. Use berries that are sturdy and won't wilt when baking, such as blueberries, cherries blackberries, or raspberries.

Fresh healthy, berries, contain many valuable nutrients like vitamins, such as C, and anti-oxidants. Many nutritionists these days recommend including a variety of colorful fruits and vegetables in your daily diet.

This recipe is so simple, anyone can make it; even an inexperienced cook.

List of Ingredients:
2 cups blueberries (fresh or froze - you may substitute raspberries, blackberries or any sturdy berry - but do not use strawberries). 1/3 cup cornstarch (Optional a pad or 2 of butter on the bottom of the pan if you don't mind the calories.) About 2/3 loaf of French or Cuban or Italian bread (cut into 1 inch cubes) or enough bread cubes to fill your casserole dish. 3 eggs 2/3 cups sugar 2 - 2 1/2 cups of half and half 1 teaspoon vanilla Pancake syrup - flavor of your choice such as maple, blueberry or strawberry.

Directions:

1. Mix blueberries, cornstarch, and sugar and pour onto the bottom of a greased 1 quart casserole dish. (you can also add a pad or 2 of butter to the bottom of the pan at this point, for extra sauce if you don't mind the calories.)

2. After cutting up the bread into cubes pour over the blueberry mixture in the casserole dish.

3. Then whisk the eggs, half and half and vanilla and sugar together and pour over the bread cubes. Make sure the bread cubes absorb the liquid mixture.

4. Bake covered, at 375 degrees, for about 1 hour. If you have a larger dish to fill with hot water, place the 1 quart casserole dish inside the dish with the water then cover and bake.

Serve it topped with butter and syrup of your choice such as maple, blueberry, or fruit flavored syrups. Another optional topping is custard sauce if you have any on hand.

This could be served with bacon or sausage early in the morning for a weekend breakfast. Or later on in the day as an evening dessert, served with ice cream or whipped cream.

The Scarsdale Diet Program's Easy Protein Bread Recipe

If you have committed yourself to the Scarsdale Diet programs, you have found then that the protein bread is an important part of the diet regimen. Many who are following the Scarsdale Diet program's method of weight loss either cannot find the protein bread in their local grocery, or are paying high prices at gourmet grocers for the bread. Here is a simple (but exceptionally good tasting) recipe for the bread.

Scarsdale Diet Program's Protein Bread

Bread Pan

Ingredients:

One-cup warm water

One tablespoon dry yeast

½ teaspoon salt

One-teaspoon sugar

½ teaspoon apple cider vinegar

½ cup soy flour

¼ cup gluten flour (gluten flour has much fewer carbohydrates than regular flour. You can substitute high gluten bread flour if you cannot find gluten flour.)

1 ½ cups whole wheat flour.

Place water in a medium mixing bowl. Sprinkle dry yeast into to bowl and let stand until yeast dissolves (five minutes or so). Add salt, sugar, and vinegar to bowl. Mix well.

Sift together soy and gluten flours together. Slowly add to the yeast mixture in the bowl.

Sift whole wheat flour and add it to mixture in bowl. Turn mixture slowly until dough sticks together (and not to sides of bowl). If you have a mixer or food processor that has dough hooks, these help tremendously with the mixing.

Lightly flour a board or other surface. Scoop dough into ball with floured hands and place on surface. Knead for five minutes until dough is smooth and elastic.

Place into small bread pan that has been sprayed with nonstick spray. Adjust dough to fit shape of pan (loaf shape). Do not try to touch dough all the way to sides of pan. Cover with slightly dampened towel and set in a warm place (free from drafts) to rise. Let rise for two to three hours until dough has at least doubled in size and reaches top of bread pan.

Preheat oven to 325 degrees.

Bake bread in preheated oven for one hour or until light golden brown.

The Scarsdale diet program's bread will be much denser than regular bread. Cut into thin slices. Keep unused portion in refrigerator.

In order to keep your Scarsdale diet program's bread longer (or if you would like to make multiple loaves ahead of time); you can double wrap the loaves in plastic (after you slice them thinly); and store them in the freezer. Take what you want out of the freezer, as you need it while following the Scarsdale diet programs.

Toasting the bread before consumption when on the Scarsdale diet programs makes the bread more palatable and easier to eat (the dense bread can be a bit dry and chewy).

If making your own bread is not for you; you can find some low cost options at the grocery. You should look for low fat/ low carb options that are whole wheat (never white) bread. Light Wheat Bread, Gluten Free Recipe - Although There's No Wheat In It, You Would Never Know!

The Great thing about this Gluten Free recipe is that even though there's No "Wheat" in it, you would never know! For all those Gluten Free people out there craving that Wheat bread taste again... Here is your chance.

Ingredients:

Bread Pan

2 cups garfava or garbanzo-bean flour
1 cup sorghum flour
2 ¼ cups tapioca flour
2 ¼ cups arrowroot flour (starch)
1 cup rice flour
1 tablespoon potato starch
2 tablespoons potato flour
2 tablespoons xanthan gum
2 packages gelatin (unflavored)
¼ cup sugar
1 ½ teaspoon salt

Mix well and keep in an airtight container. You can use cornstarch instead of arrowroot. This was originally designed to bake at an altitude of 5000+ feet so you may need to make adjustments.

Mixing time: 15 minutes
Rising time: 20 minutes
Baking time 45 minutes

Grease an 8 ¼ x 4 ¼ bread pan with lard.

In a large mixing bowl place:

2 eggs
2 Tablespoons canola or olive oil
1 teaspoon apple cider vinegar

Dissolve: 1 ½ tablespoons of honey in 1 ¼ cup very warm water and set aside.

In a bowl stir together:

3 cups Maria's Bread Flour Mix
2 teaspoons yeast
1 teaspoon baking powder
1/8 teaspoon citric acid.

Directions:

Beat the egg mixture at high speed until foamy.

Add the water and honey mixture to the egg mixture and beat until it becomes foamy again.

Turn the speed low and add ½ cup of flour mix at a time (wait for it to be absorbed before you add each ½ cup).

After the flour mix is added turn the mixer to high speed and beat for about 3 minutes.

The texture should be like cake batter.

If it is too thick, add one tablespoon of warm water at a time until it is the right consistency.

Spoon it immediately into the prepared pan and carefully smooth the top.

Cover with a plastic container or large lid to keep the temperature even and put it in a warm place to rise (like on top of your oven).

Place it in the oven when the dough reaches to the top of the pan (not higher - approximately 20 minutes).

Bake for about 45 minutes at 375F.

Now when it comes out of the oven there's one last step people commonly overlook to make sure it stays fresh for days. It's so simple, just brush the top of the bread with a special ingredient EVERYONE has in their pantries!

After brushing with the special ingredient, let it totally cool on the rack.

Easy Bread Pudding Recipe - Bread and Butter Pudding Recipe

If you've been yearning for a recipe for old fashioned bread pudding, this is a delicious raisin bread pudding recipe that will bring back warm memories.

6 slices day old bread

Bread Pan

2 tablespoons butter, melted

1/2 cup raisins (optional)

4 eggs, beaten

2 cups milk

3/4 cup white sugar

1 teaspoon ground cinnamon

1 teaspoon vanilla extract

Directions

Preheat oven to 350 degrees.

Grease an 8-inch square baking pan.

Break the bread into small pieces and place into the baking pan. In a saucepan, melt the butter, then drizzle over bread cubes. Sprinkle raisins over bread.

In a medium bowl, combine the eggs, milk, sugar, cinnamon and vanilla. Beat thoroughly. Pour egg mixture over bread. Lightly push bread down with a fork until bread has completely soaked up the egg mixture.

Bake 45 minutes, or until the top springs back when pressed.

2 dozen (stale) Krispy Kreme doughnuts or 1 1/2 dozen regular glazed donuts

Directions

Preheat oven to 350 degrees.

Grease a 13x9-inch glass baking dish.

Cut doughnuts into small cubes and place into prepared baking dish. In a bowl, combine the milk, fruit cocktail, eggs, raisins, salt and cinnamon. Pour mixture over the doughnuts and let this soak for 30 minutes. You can also cover the dish and refrigerate overnight at this stage.

Bake for 60 minutes, or until the center is firm to the touch. Serve bread pudding warm and drizzle the Butter Rum Sauce over each serving.

Butter Rum Sauce

1/2 cup butter

1 (16 oz.) box powdered sugar

Rum (or rum extract) to taste

In a saucepan, over low heat, melt the butter. Slowly stir in the powdered sugar. Add in the rum; heat until bubbly. Pour over bread pudding.

Separate egg whites from yolks and beat egg whites until stiff peaks form; set aside.

In another bowl, combine the egg yolks and sugar; beat well. Gradually beat in the milk mixture. Fold in the egg whites. Stir in the bread cubes and let sit for 60 minutes.

Pour mixture into prepared casserole dish. Bake for 60 minutes, or until top springs back when pressed lightly. Top with vanilla sauce.

Vanilla Sauce

1 tablespoon butter

2 tablespoons flour

2 cups boiling water

1/4 cup sugar

1 teaspoon vanilla

In a saucepan, melt the butter over low heat. Add in the flour and stir constantly until the mixture bubbles. Stir in the water and sugar. Boil until mixture is smooth and completely cooked. Remove from heat. Add in the vanilla. Serve over warm bread pudding.

In a saucepan, combine the lemon juice, water and sugar. Bring to a boil and stir in the cornstarch. Stir until well blended, add more water if needed. Remove from heat and add yellow food coloring if desired. Serve over warm bread pudding.

Changing a Bread Recipe

When people make homemade bread they are generally looking for qualities different from bread that can be purchased in a store. With bread made at home, the baker can tailor the loaves to match her own tastes and the tastes of family and friends. This is especially true in cases where the baker has some experience and gets to know the precise effects of the ingredients used to make the bread.

Bread machine makers and recipe books strongly discourage varying the ingredients in a recipe. However, trying out different ideas is the best way to discover the optimum flavor and texture of a bread. Adding more sugar, for example, makes a sweeter bread and is recommended especially for making raisin bread or cinnamon rolls. For dinner rolls try using olive oil instead of butter or margarine. The author has found that bread recipes that include milk can most often be made with water as a substitute with no discernible difference in taste.

Bread Pan

Different kinds of flour can also be used. All purpose flour usually works as well as flour manufactured especially for making bread. Bread flour contains more protein/gluten. This helps keep the dough more elastic when rising. But the average consumer or baker will not be able to discern much difference, except in some cases where a more chewy texture is desired. Whole wheat flour or non-gluten flour or other special flours (such as rice or oat flour) will require special handling. In these cases a separate recipe should be the starting point. Whatever is done with the flour, the ratio of wet to dry ingredients should stay at least roughly the same.

The amount of salt should probably not be changed much, although it can generally be reduced from the amount recommended in a recipe. Nevertheless, it is nearly always a mistake to increase the amount of salt in a recipe as it deters the yeast from rising. The baker should not be tempted to change the amount of yeast in a recipe as more might lend a yeasty flavor and less only means a longer period for rising. (Generally, bread should not rise for a specific period of time as much as it should double in size. This is usually dependent on the action of the yeast - more than the recommended amount of yeast wont make the dough rise any faster, while less will mean the yeast will have to spend a little more time multiplying.)

Bread machines make very good bread. Nevertheless, hand-made bread is superior, perhaps because of the method of kneading. However, the baker can have the best of both worlds. It is a simple matter to make dough in a bread machine; then remove it, knead it a few times, and lay it in a bread pan for a final rise and baking.

The final product can also be adjusted. Some people like to lather the baked bread in butter or oil. The bread can be eaten immediately, but this often results in a mashed loaf as the bread is not yet firm enough to stand up to the pressure of even a sharp knife. It is best to let a loaf cool for at least twenty minutes (better even longer). Crust style can also be changed. Many people like to have a soft crust rather than the hard crust that is often associated with homemade bread. This can easily be accomplished by letting the bread cool for several hours, and then placing the bread in an air-tight plastic bag over-night. The next morning the bread can be easily sliced and served up with jam or as toast. Storing in a plastic bag can also make the bread more amenable to sandwiches.

Classical Christmas Recipe - Roasted Turkey With Bread Sauce and Gravy

Serves 8

1 x 6 kg turkey, plus the neck from the giblets if available
105 ml vegetable oil
Watercress, to garnish

Bread Pan

GRAVY

1 small onion, roughly chopped
1 small carrot, roughly chopped
2 celery sticks, roughly chopped
30 g plain flour
500 ml chicken stock

BREAD SAUCE

600 ml milk
½ onion, studded with 3-4 cloves
1 bouquet garni
2 cloves garlic, peel and lightly bruised
105 g fresh white breadcrumbs
Grated fresh nutmeg
2 ½ tablespoons cream or 45 g unsalted butter optional

1. Clean the turkey inside and out, removing any feathers. With a sharp knife, cut off and reserve the end wing joints. Lift up the flap of skin at the neck and, using a small sharp knife, scrape the meat away from the wishbone and remove the wishbone. Tie the legs together with string. Preheat the oven to moderate 180 degree C.

2. Place a large roasting pan over medium heat and heat the oil. Add the end wing joints and neck and cook until lightly browned, then arrange the turkey on top and bake for 1 ½-2 hours, basting with the juice and oil every 20 minutes. If the turkey is begins to overbrown, cover with foil. The turkey is cooked if the juices run clear when you pierce a leg and thigh with a skewer. If pink, continue roasting until the juices are clear. Transfer the turkey to a large plate and leave in warm place.

3. To make the gravy, tip off the excess fat from the pan, retaining about a tablespoon with all the juices. Add the onion, carrot and celery and cook over moderate heat, stirring occasionally, for 3-5 minutes, or until tender. Sprinkle on the flour, then stir in to mix evenly and cook for 1 minute. Add the stock gradually and stir over low heat to produce a smooth texture. Bring to the boil, then reduce the heat and simmer for 10 minutes. Strain, skim off the excess fat and season with some salt and black pepper.

4. To make the bread sauce, pour the milk into a small pan, add the onion, bouquet garni and garlic and bring slowly just to the boil. Remove from the heat and leave to stand for 20-30 minutes. Strain and discard the flavourings, then return the milk to the pan and bring to the boil. Whisk in the breadcrumbs to produce a thick sauce and season with the nutmeg and some salt and black pepper. Stir in the cream or butter. Serve immediately, as the sauce will thicken on standing.

5. To serve the turkey, carving the turkey carefully will allow everyone a good choice of white and dark meat. Serve with the bread sauce, gravy, stuffing and other traditional accompaniments.

Cranberry-Orange Bread Recipe

Cranberry-Orange bread is a delicious quick bread to make for Thanksgiving and Christmas. Cranberries are a healthy seasonal food to add to your holiday menus. They are beneficial for kidney infections and strengthen the blood vessels. I use healthy butter in this recipe and dehydrated cane sugar which still contains its minerals and vitamins instead of processed white sugar.

This recipe makes a delicious treat after the Thanksgiving meal and a great gift for Christmas. Make a few extras to store in the freezer for a quick gift or if you need an extra food to bring to a party.

Bread Pan

Cranberry-Orange Bread Recipe

2 cups unbleached flour
¾ cup dehydrated cane sugar
1 ½ teaspoons baking powder
¾ teaspoon sea salt
½ teaspoon baking soda
½ cup butter from pastured cows, softened
1 tablespoon grated orange peel, from organic oranges
¾ cup orange juice
1 egg, from pastured hens
1 cup fresh or frozen cranberries, chopped
½ cup walnuts or pecans, chopped

Step 1: Preheat the oven to 350°. Grease a bread loaf pan with lard.

Step 2: In a bowl, mix the flour, dehydrated cane sugar, baking powder, salt and baking soda. Stir the butter into the mixture until it is crumbly.

Step 3: Stir in the orange peel, orange juice and egg until moistened. Stir in the cranberries and nuts.

Step 4: Spoon the mixture into the bread pan and bake 1 hour and 15 minutes. Insert a wooden toothpick or dull knife in the center to check for doneness. When done, loosen the bread from the sides of the pan and flip over onto a cooling rack. When cooled, cut into slices and store in a covered container.

Create the Best Bread Pudding Recipe - New Orleans Style!

My grandmother had the Best Bread Pudding Recipe without a doubt. It is still one of my favorite desserts. Imagine my surprise on my first trip to New Orleans to discover all Bread Pudding is NOT alike!

There are actually several variations of this dessert. My grandmother's version is a variation of a traditional dessert popular in British Cuisine. It is called bread and butter pudding and is often confused with bread pudding. Cubed bread is placed in a pan and then covered with an egg mixture to make a custard. After it is baked, the bread rises to the top to form a "crust" like topping. It tastes similar to French toast. The egg mixture forms a rich custard pudding at the bottom. Of course, my grandmother added her secret spices to give this a sweet nutmeg flavor. It is absolutely wonderful!

Louisiana bread pudding is made entirely differently and is just as good. The common ingredient is stale bread, but that is where the similarities end. The bread pudding consistency is similar to a moist cake and is warm served with a wonderful vanilla, whiskey, or rum sauce. The smell is heavenly and if you get a chance to visit New Orleans, this is a MUST have dessert that is served at most restaurants.

The following recipe, a specialty of my New Orleans sister-in-law, is a requested dessert at holidays, parties or any special occasion. The secret to this recipe is the bread. Stale french bread is the best. Use the long narrow loaves, if available. No matter what size pan she uses, it is always empty at the end of our family gatherings!

Best Bread Pudding Recipe

Ingredients

6 - 8 cups stale bread, broken in cubes
1 can evaporated milk
2 cups sugar
8 tablespoons butter, melted
3 eggs
2 tablespoons vanilla
1 large can fruit cocktail, drained
3/4 can condensed milk
1 teaspoon nutmeg
1 cup raisins

Directions

Combine milks, butter, eggs, vanilla, sugar, nutmeg. Fold in bread and stir. Mixture should be very moist.

Add fruit cocktail and raisins. Mix well. Pour mixture into a 9x13 baking pan. Bake at 350 degrees approximately 1 hour or until top is golden brown. Serve warm with whiskey sauce.

Variations

You can leave out the raisins. Try adding blueberries, peaches, or apples.

Although my grandmother's recipe is still one of my favorite desserts, I can truthfully say that this is the Best Bread Pudding Recipe - New Orleans Style!

Recipe For Moist Banana Bread

What do you do with bananas that are going ripe more quickly than your family can eat them? Make Banana Bread! It's great as a after school snack, lazy winter morning breakfast or dessert with your favorite meal. It's a comfort food that no one willingly passes up. It's pleasant fruity aromas filled the house and bring every one to the kitchen asking, is it done yet? Enjoy it warm, cold or even toasted.

Banana bread first made it's way in to cookbooks in the 1930's. Shopkeepers and grocers would have recipes available for shoppers when they had too ripe fruit on their shelved to try to make a sale for the product before it hit the trash bin. With the resurgence of home baking in the 1960's it regained the popularity it once had. Unlike some other recipes it was straight forward and required very little skill to create.

Banana bread is a popular gift giving item during the holidays, making it's way onto many platters for family, friends and neighbors.

The following recipe will make the moistest Banana Bread you have ever tasted. It's easy and takes no special ingredients. For best results use very ripe bananas. Be sure there are brown spots all over the peels and mash them well.

Ingredients:

1- 1-1/2 cups mashed ripe bananas, about 3-4 bananas
1/2 cup melted butter
1 cup granulated sugar
1/4 cup milk
2 cups all-purpose flour
1-1/2 tsp baking powder
1 tsp baking soda
1 tsp salt
2 large eggs
1 tsp vanilla extract
1/4 cup milk

1. Preheat oven to 350 degrees. Prepare greased 9 x 5 x 3 bread pan.

2. In a bowl, combined mashed bananas, butter, sugar and 1/4 cup milk. Mix to combine.

3. In a large bowl, sift together flour, baking powder, baking soda and salt. Add in the banana mixture. Beat with an electric mixer on medium speed for about 2 minutes. Add eggs, vanilla extract and 1/4 cup milk. Beat for about 1 minute on medium speed.

4. Pour batter evenly into the greased pan. Place pan in oven on the middle rack. Bake for 30-40 minutes or until toothpick or knife inserted in the middle of the bread comes out completely clean.

5. Remove from the oven and let it cool for 10 minutes, then remove from pan and let cool completely on wire rack.

For this recipe you can also use a 9 x 13 cake pan.

To add a different flavor use raisins or add pecan or walnuts. For the chocoholic try adding chocolate chips. Top with powder sugar or a cream cheese frosting.

If you have ripe bananas but have no time for baking, they can be frozen in a brown paper bag.
