A Typical Filipino Breakfast

Filipinos love to eat. An average Filipino eats around six times a day. We eat breakfast usually around 6-7 am, we have some snacks usually around 10am, lunch, more snacks at 3pm and finally dinner.

A typical Filipino breakfast is usually eggs, sunny side up; fried rice and any or all of the favorite Filipino breakfast staples: tocino or sweetened pork strips; tapa, a kind of beef jerky or tuyo, dried salted fish.

These dishes are fairly easy to cook. They require only minimal cooking skills. Fried rice is usually recycled rice from the night before. It is just rice that has cooled, then fried in a little oil with lots of garlic. Tocino and tapa, require a little boiling, when they are soft, the water is usually drained and a little cooking oil is added to fry the meat. Once it has started to caramelize, it is removed from the heat and served hot. Tuyo is usually washed to remove the excess salt and then fried in hot oil.

Filipinos are talkative in nature and even early in the morning the mood in the breakfast table is usually festive. Breakfast is usually a time for mom to remind her family to be good in school, to come home on time and for dad to take it easy at work. Although most Filipino mothers work, they still find time to cook these simple fares for breakfast with the family.

Breakfast is a good time for the children to touch base with their parents too. Since both parents usually work and come home late when the children are about to go to bed, kids usually remind their parents of upcoming projects for school or ball games and parent teacher conferences during breakfast.

Other favorite Filipino breakfast dishes are: hotdogs, pork and beans, sardines usually in tomato sauce and corned beef. Since children's classes start early in the Philippines, usually around 7-7:30 in the morning, breakfast food is usually easy to prepare. And rice is usually eaten with whatever viand there is.

Though it is not uncommon to find Filipinos eating cereals, oatmeal, toast or pancakes for breakfast, the tuyo, tapa and tocino will always be all time Filipino breakfast favorites. In some tables, a combination of a cooked and cold breakfast is even common. Mom may prefer oatmeal and fruit to her kids milk and cereal, and dad might opt for the cooked breakfast. It is also a frequent practice in most Filipino homes to eat pan de sal or bread while waiting for a cooked breakfast.

Filipinos definitely believe to eat like kings during breakfast because this gives us more time to chat with each other and enjoy each other's company. It is a time to relax before starting a long day.

Great Breakfast Ideas

Most people choose to skip breakfast because they think it is troublesome to wake up and prepare it. Having breakfast is a very important thing to do to start a wonderful day, isn't it? Bored of your breakfast menus? Then you may try some of these wonderful menus to spice up your brand new day! There are a few ingredients that you must have to prepare great breakfasts.
First of all, eggs. Eggs are perfect for breakfast because they give you protein needed for your body growth. Well, they are also healthy but do not consume too many eggs in a day because you may end up having high cholesterol instead of only protein. Eggs are also great breakfast ideas because they do not cost a fortune and very affordable. Thus, it is something you can afford to eat and you do not have to be filthy rich to stay healthy! Using eggs, you can prepare scrambled eggs for breakfast. Scrambled eggs are easy to make and you can include them in your menus especially on a busy day because they only require less preparation time. All you need is eggs, butter, cream, Cheddar cheese, salt and pepper. The steps are really simple and easy to follow as well. Mix the eggs and cream in a bowl; then, add in melted butter. Heat your pan and spread the eggs all over the pan until the mixture is balanced. After that, sprinkle the cheese on top then when the egg is almost cooked, simple stir your spatula to scramble it. In less than 10 minutes, you will be able to enjoy your scrambled eggs!
Besides, sandwich is also another great breakfast idea. As the bread, choose whole meal bread because it is a healthier choice. Having sandwich as breakfast is a good thing because you can add in a lot of ingredients to make your diet more balanced. You can choose from ham, cheese, lettuce, tomatoes, eggs or even bacon as your ingredients. All you have to do is spread a little bit of margarine onto the bread and then add the ingredients in between to make your sandwich. It is great because if you do not have time to eat at home, you can bring it out and eat while waiting for your bus or on your way to work. However, you should always include vegetables like lettuce, cucumber or tomatoes into your sandwich topping so that you will have enough minerals.
On top of that, pancakes are also terrific! Pancakes are easy to make and eating them gives you warmth in the stomach especially early in the morning. All you need to prepare is flour, sugar, baking powder, milk and melted butter. Mix everything in a bowl and you can see a thick mixture that is light yellow in color. Heat the pan and fill the pan with flour mixture, but just a thin layer. Wait for 2 minutes and turn it over so that you will have nicely cooked pancakes! Serve while it is hot and you can add fruits or caramel as toppings to make it tastier.

Fun Breakfast Recipe - Bubble Loaf

This breakfast recipe is gooey but tasty and can be a lot of fun to make. It was always a challenge for mom to keep us from picking, prodding, and poking at this fun breakfast treat while the bread dough was rising. And even more of a challenge to keep us from burning our hands and mouths on it after this sticky, gooey treat came out of the oven. It gets its name from the fact that the pieces you put into it look like bubbles. It is a good recipe to make for brunch since the dough takes some time to rise.

Bubble Loaf

Bread Pan

2 loaves partially frozen bread dough
1/2 cup sugar
2 teaspoons cinnamon
1 package butterscotch pudding
1/2 cup brown sugar
1/2 cup butter

Mix together the sugar and cinnamon in a small bowl and set aside. Mix together the butterscotch pudding and brown sugar and set aside. Cut each loaf into 2 pieces. Cut 2 pieces lengthwise again. Cut each strip into small pieces. Roll each piece into the sugar and cinnamon mixture. Pile (toss, throw - this is where it can get fun) all of these pieces into a well-greased bundt or solid tube pan. After all pieces are in the pan, take the butterscotch pudding and brown sugar mixture and sprinkle it over the bread dough pieces. Melt the butter and drizzle over the bread dough, pudding, and sugar mixture. Cover the pan with wax paper and a towel and let rise for 1 1/2 hours. Bake at 350 degrees for 25 to 30 minutes. Allow to cool for a while, turn over pan, and shake the bread out.

For making this into a quicker breakfast recipe: If you don't want to have to wait for it to rise, substitute 3 cans of buttermilk biscuits (10 to a can) for the bread dough. You'll also need to increase the cooking time to 30 to 35 minutes.

Kids can have fun helping with this breakfast recipe. Even really little ones can have fun rolling the pieces in the cinnamon and sugar and tossing them into the pan. Hopefully most of them will hit the pan! You can also make it into a race; who can roll the most pieces. And for little ones learning to count, you can make it a learning experience by counting the number of pieces you put into the pan.

Easy Quinoa Bread Recipes for Breakfast and Snacks

We're all fond of sandwiches, burgers, garlic breads, bread and butter, jam on bread, and a lot of other bread menus. We pair bread with almost anything, like rice, corn or potato. Our breakfast is not that complete without bread.

But what if you're on a diet and you're trying to cut out on the carbs because you are on a diet to fit that summer outfit you were dying to wear? Don't fret. You don't need to cut the carbs out (no, not the good ones), which means you also don't need to skip eating bread. Hurray! The answer to your dilemma is not wheat bread, it is Quinoa bread.

Quinoa is growing very popular nowadays. It comes in grains, as cereals, flour, in the form of pasta or bread. It is a very healthy food and is very weight-loser, health-conscious or vegetarian-friendly. It contains high amounts of fiber, vitamins and minerals such as Vitamin E, calcium, potassium, magnesium, zinc and iron. It is also one source of protein. And since I was talking of carbohydrates a while ago, I am proud to share to you that Quinoa contains the good carbs. Good carbs are slow releasing and this means your chance of getting hungry faster is lowered.

Quinoa, which has a nutty-earthy flavor, is perfect to be consumed as bread. If you are feeling a little adventurous and you don't want to buy Quinoa bread, preparing it is just easy. Get the following ingredients ready: 1 non-stick loaf pan, 1 cup of Quinoa, 1 cup of cashews, teaspoonful of vanilla, sea salt, 2 tablespoon sweetener, 2 eggs, 2 tablespoon starch, 1 cup almond meal, 1 tablespoon baking soda, 1 tablespoonful baking powder. Be sure to ready the Quinoa (preferably, choose white Quinoa grains; there are 3 variants: white, red and black Quinoa) and cashews by soaking them each in water 1 night before making the actual bread.

When you've got all the ingredients ready, preheat your oven at 375oF. Drain the cashews and blend it with 3 cups of water, the 1 tablespoon sweetener, and a teaspoonful of vanilla, finally, add a pinch of the sea salt, then blend until the liquid is milky and has smooth consistency already. Drain Quinoa as well. Place the drained Quinoa, 2 eggs, ¾ cup of the cashew milk, another tablespoon sweetener, 2 tablespoons of starch and a another pinch of sea salt. Blend this mix again, for about a minute or two. Make sure you don't leave any Quinoa seeds whole. Mix the almond meal, 1 teaspoon baking soda, and 1 tablespoonful of baking powder in on bowl.

After creating the cashew milk, blending it with Quinoa and the other ingredients, and mixing the almond meal with baking soda and baking powder, it's now time to mix these three combinations together. Mix them together until blended and stop there. You don't want to over-mix it. You know the mixture is right when it is liquid, just like pancake mixture.

Pour this mixture in your non-stick loaf pan. If your loaf pan is not non-stick, oil the bottom and the sides. Bake this mixture for 45 minutes to around an hour. Check the bread after 40 minutes will be good. You'll know the bread is cooked already when the middle part of it is not wet-looking anymore.

Bread Machine Recipes - Whole Wheat Iced Breakfast Bread

This bread machine recipe for whole wheat bread is suitable as is for most bread machines. Add the ingredients in the order that your machine tells you, but for the most part that will be liquids first and flour last with the yeast sprinkled on top right before inserting the baking pan into the bread machine. This is a delicious breakfast bread that you will enjoy with your morning cup of coffee.

Bread Ingredients:

Bread Pan

2 tablespoons brown sugar. Pack it tightly into the measuring spoon.
1 1/2 teaspoons salt.
2 tablespoons canola oil. Some people prefer olive oil but I think it adds the wrong taste.
1 1/2 cups water. Lukewarm from the tap or bottled if you prefer.
1 c. whole wheat flour
3 c. unbleached white flour or bread flour. My favorite is King Arthur brand.
1 3/4 teaspoons yeast.
Optional: almonds or raisins

Icing Ingredients:

1/2 stick butter
2 drops of vanilla
1/2 pound powdered sugar
milk to consistency

Let the bread bake through to completion, about 3.5 hours. Take the finished bread out of the baking container and let it cool on a rack. You can use the time to make the icing. For the icing, melt the butter in a microwave until it is just becomes pourable. You don't need it to be red hot. Add the melted butter, vanilla, and half the powdered sugar to a bowl. Add a little milk and a little more sugar in several batches until you use up all the sugar and get a consistency that pours easily in a thin stream. If it's too thick add a few more drops of milk at a time, and if it's too thin add a teaspoon or so of powdered sugar at a time until the consistency looks right.

Move the bread to a large dish to catch the drippings and pour the icing over it. Let it cool and enjoy. You could probably substitute 1 c. of wheat flour for 1 c. of unbleached flour but read the directions for your bread machine. Many bread machine recipes never use more than 1 c. of wheat flour.

Easy, Overnight, Breakfast Recipes

We don't leave the house on Christmas and the grandparents frequently come over to watch the boys open their presents. I don't want to have to spend lots of time in the kitchen on Christmas morning, so I've been able to pull together some recipes which are prepped the night before and only require a few minutes the next morning. Obviously, these aren't just for Christmas morning, but any morning that you'd like to have a nice, easy breakfast with minimum kitchen time!

Overnight Coffee Cake

1/3 cup softened butter

½ cup sugar

¼ cup brown sugar

1 beaten egg

1 cup flour

½ tsp. baking powder

¼ tsp baking soda

½ tsp cinnamon

½ cup buttermilk

Topping:

¼ cup brown sugar

¼ cup pecans (or use oatmeal)

¼ tsp cinnamon

1/8 tsp nutmeg

Cream the butter and sugars together. Add the egg; mix well. Mix remaining dry ingredients and add to the creamed mixture alternately with the buttermilk. Beat well. Spread into a greased 8" pan.

Mix the topping ingredients together and sprinkle over the batter.

Cover and refrigerate overnight. The next morning, remove it from the refrigerator for about 15 minutes and in the meantime, preheat the oven to 350f. Bake for 40 to 45 minutes or until a toothpick comes out clean.

Overnight Cinnamon Raisin French Toast

2 TBS butter

5 Golden Delicious Apples, sliced

¼ cup brown sugar

3 TBS apple juice (water is okay, too)

1 loaf of cinnamon/raisin bread

3 cups milk

½ tsp salt

½ tsp cinnamon

10 large eggs

1 TBS additional butter

2 TBS sugar

Melt 2 TBS of butter in skillet and cook apples about 20 minutes until golden. Add apple juice (water) last minute.
Grease 3-4 qt or 13"X9" baking pan. Arrange ½ of the bread slices in pan, overlapping slightly. Mix the milk, salt, cinnamon and eggs really well. Pour half of egg mixture over bread. Reserve ¼ of the apple slices, and then spread the remaining apple mix over the bread in an even layer. Arrange remaining bread in another layer, and then pour the remaining egg mixture over that. Press the bread gently, if needed, to help it absorb the egg mixture. Dot the top with the 1 TBS of butter and sprinkle on sugar. Cover and chill overnight.

Bake the next day at 325f, uncovered for 50 to 55 minutes or until knife comes out clean. Reheat reserved apple mixture and spoon over the top of the French toast as it's served.

Orange-Blueberry Breakfast Bread: A Delicious Way to Start Your Day

Coffee and tea drinkers look forward to the first cup of the day, the fragrant, steaming brew that gets them up, gets them thinking, and gets them on their way. Home-baked goods are also eye-openers for many of us. This Orange-Blueberry Breakfast Bread smells marvelous when it's baking and, thanks to the citrus tang, tastes as good as it smells.

Before you start baking look over the blueberries carefully. Remove any stems and leaves that you find. Discard berries that are starting to "turn" because they won't withstand the baking time. Rinse the blueberries and dry them well. This recipe is based on a recipe that has been around for years. To make the recipe healthier I added wheat flour, used Splenda for sweetness, and substituted unsweetened applesauce for the shortening.

After the bread comes out of the oven let it cool (in the pan) on a rack for 20 minutes. Turn the bread out of the pan and let it cool completely. Use a serrated knife to slice the bread. One loaf yields about 16 slices. This bread has so much flavor you don't even need butter. Now on to the star of the show, Orange-Blueberry Breakfast Bread.

DRY INGREDIENTS

1 cup white and wheat flour blend

1 1/2 cups presifted white flour

1/2 cup Splenda Sugar Blend for Baking

1/2 cup Splenda

1 tablespoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

2 cups fresh blueberries

WET INGREDIENTS

2 large eggs, room temperature

3/4 cup fresh orange juice

1 tablespoon pure orange extract

1/4 cup unsweetened applesauce

2 tablespoons canola oil

METHOD

Preheat oven to 375 degrees. Coat a loaf pan with baking spray and set aside.

In a large bowl combine dry ingredients with a whisk. Sprinkle the blueberries over the flour mixture and fold in gently with a rubber scraper. Make sure all of the berries are coated with flour.

In a small bowl beat the eggs with a fork. Add the orange juice, orange extract, applesauce, and canola oil and combine well. Pour the wet ingredients into the dry, mixing with a rubber scraper just until the batter is moistened. Turn into prepared loaf pan and bake for 45 minutes, or until the bread starts to pull away from the pan. This bread freezes well.

Quick Microwave Breakfast Ideas

I've come to love my microwave in more ways than ever. We have three boys who are growing so quickly and always on the go with sports, school and playing in general. They are always hungry and I have definitely found that starting them off with protein rich and fiber rich breakfasts keep them going longer than boxed cereals. In addition, I do dental hygiene on a per diem basis. I might be trying to get out the door in a very short amount of time and I want to be able to eat a quick breakfast that will also fill me up.

I've come up with a variety of breakfast recipes that utilize the microwave which significantly speeds up the cooking process without sacrificing flavor. These quick, microwave breakfasts will also save you money if you don't have to swing by the local fast-food window on the way to work!

Bacon, Egg and Cheese Sandwich

First, put toast or English muffin into toaster and get that toasting. Second, get egg, slice of cheese and two slices of pre-cooked bacon out of fridge (you can also substitute those precooked sandwich style sausage patties). Grab cooking spray and large coffee mug and small bowl to beat egg. Put the bacon into microwave while you prep the egg (probably takes 30 seconds or so). Break egg into bowl and beat with a bit of water. Generously spray inside of mug with cooking spray and pour beaten egg/water into it. Bacon should be just about done. Pull the bacon out, put the mug of egg in and cook on high for one minute (might take another 10-30 seconds depending on your microwave). While the egg cooks, take out the toast/English muffin and place cooked bacon on it, and then the slice of cheese. When the egg is done, use a fork to slide it out of the mug and out onto the cheese. You can fan the egg out by slicing it through the middle. Top with the other slice of toast or English muffin and voila, bacon/egg/cheese sandwich in less than five minutes!

You can also prepare several of these at one time, wrap each in plastic wrap and then refrigerate. In the morning, you can grab one out of the fridge, remove the wrap and microwave on a plate for about 30-60 seconds for an even quicker breakfast!

Omelets

You'll be using the same cooking technique for cooking the egg but this allows you to add fillings and still make it quick! I use a glass bread pan to make my omelets. First, get 2 eggs and various fillings out for your omelet. Some ideas for your omelet:
-diced vegetables like broccoli, onions, peppers, spinach (great way to use up small amounts of leftovers)
-diced cooked meats like ham and turkey
-diced up cheese
-fresh or dried herbs
SAVE TIME EACH MORNING-Have a small supply of pre-cut cheese, vegetables and meats in containers for easy morning prep.

Generously spray your bread pan with non-stick cooking spray. Beat the two eggs with a tablespoon or so of water. Pour the beaten eggs into the sprayed bread pan. Place your fillings throughout the egg mixture. Microwave on high for about two minutes, keeping in mind each microwave varies on cook times. It will puff up a bit. CAREFULLY REMOVE FROM MICROWAVE-using oven mitts as the bottom of the pan will be hot! Fold out the omelet onto a plate and enjoy!

You can experiment with making a larger omelet in a 9" square baking dish using 4 eggs and more fillings. You'll need to microwave a bit longer as well. When you use the bread pan, you can easily fold the omelet out onto slices of toast for an omelet sandwich!

Oatmeal

I love oatmeal. I love quick oatmeal but not those pricey, little instant bags of oatmeal. I love old fashioned type oatmeal that is QUICK! It can be quick if you use the microwave!

I use a rough ratio of 1:2.5 to make my oatmeal. ¼ cup of old fashioned rolled oats to 2/3 cup of water. Vary the liquid to your preference to how you like your oatmeal. I will also add a bit more water when I add dried fruit to my oatmeal. My basic recipe is:
-1/4 cup of old fashioned rolled oats
-2/3 cup water
-few dashes of cinnamon
-tablespoon or so of brown sugar
-some cut up dried apples (I cut them up ahead of time so I can grab them quickly)
-just a pinch of salt

Give it a gentle stir and then microwave on high for two minutes. Stir it again, judge if it's the right consistency and add more liquid if desired (a bit of milk is tasty, too). It's hot so dig in carefully. Mmmmm, cold milk and hot oatmeal on a cold New England morning is so nice!

You can speed up the oatmeal preparation by mixing up the roll oats, the cut up dried fruit and the cinnamon together in a container. You'll just have to reach in and scoop out the desired amount of the mix. I don't add the sugar and salt because they tend to not cling too much and end up in the bottom of the container.

Bread Machine Recipes - Whole Wheat Bread Breakfast frozen
