Oven Baked Chicken Breast - Money Saving Tips For a Healthier Meal

Oven baked chicken breast is an easy dish to make. It requires little preparation time, does not need to be watched closely while baking, and tastes great. Boneless skinless chicken breast recipes are very alluring as an entrée for either lunch or dinner and everyone seems to like them.

However, you may want to know how to save money when preparing them.

Meat Preparation To Save Money

The cost of boneless skinless chicken breasts may be prohibitive when compared to other meats. Processing a whole chicken into more usable parts at home will help you save money.

A whole chicken is usually much less expensive than boneless skinless chicken breasts because of less handwork by the butcher. If you perform the same tasks the butcher would to reduce an entire bird into more usable pieces then you are applying your labor instead of paying cash for it at the store.

It is not difficult to process a whole chicken. You can often find whole chickens on sale so buying a few while on sale and storing the butchered pieces in your freezer will save you money.

A side benefit is that you end up with skin and bones, which can be boiled and converted to make rich chicken broth. Broth can be used for chicken soups of all types or in other recipes for flavoring.

By allowing the fat to float to the top of your finished broth while it is stored overnight in the refrigerator will allow you to easily remove it. A low-fat chicken broth is much healthier and more flavorful.

Chicken broth can be used in many ways when you are formulating your healthy diet plan. To eat healthy you must plan ahead. Otherwise you will eat whatever is available when you get hungry.

Unfortunately, this is usually fast food and fast food is bad for you.

Oven Baked Chicken Breast Recipes

These recipes are easy to make. Whether served for lunch or dinner they will add a reliable source of protein to your meals.

Try this simple yet elegant dish for an easy family-friendly meal.

Marinated Chicken Breasts With Dip

Place boneless skinless chicken breasts in a bowl or plastic bag. Add your favorite Italian or other olive oil based salad dressing. Cover bowl or seal plastic bag. Allow to marinate in the refrigerator overnight.

When ready to bake place marinated breasts into an oven-safe pan or baking dish. Bake uncovered at 350 degrees for approximately 30-45 minutes. The cooking time will differ depending on the thickness of the chicken breasts.

They are done when cooked through with no red blood or meat visible when a cut is made in the thickest portion of the breast.

You can serve the chicken with the same dressing you marinated it in or another to use as a dip. Creamy dressing such as Ranch or blue cheese (as well as Roquefort) work great as dips.

Serve with a large salad containing many different colorful vegetables and wild rice cooked in chicken broth from your homemade chicken broth.

Oven-Baked Chicken Parmesan

Chicken Breasts
1 Egg, beaten with a splash of water
3/4 cup Italian seasoned bread crumbs
1/2 cup grated Parmesan cheese
1 large jar marinara sauce
1 cup shredded low-fat mozzarella cheese

Mix Italian breadcrumbs and Parmesan cheese.

Dip chicken breasts in egg wash (beaten egg and a splash of water) then roll in Italian seasoned breadcrumbs and Parmesan mix. Bake uncovered in a glass baking dish at 350 degrees for 30-45 minutes depending on the size of the chicken breasts.

Breasts are done when cooked through with no red blood or meat visible when a cut is made in the thickest portion of the meat.

Warm the marinara sauce in a covered sauce pan.

Place cooked chicken breasts on a serving platter, spoon marinara sauce over them, and then sprinkle with low-fat mozzarella cheese.

Serve remaining marinara sauce over whole grain pasta (whole wheat, spelt, brown rice, etc.) and garnish with grated Parmesan cheese.

Begin the meal with a large salad. An olive oil based dressing is preferred because of the health benefits this healthy oil offers.

Ground Chicken method For Chicken Burgers

I found this yummy Ground Chicken recipe for Chicken Burgers and my family love it - especially the kids. It's full of flavour and lower in fat than a quarterly beef burger because it uses ground chicken breast meat which contains minimal fat. Get the kids to help you assemble the chicken burgers and even make their own sauces. The recipe contains optional extras like cheddar cheese to enclose in the chicken burger patties and chilli powder for an extra spicy taste.

Chicken Burger recipe Ingrediets

Bread Pan

oil, for cooking 1 large onion, finely chopped 750 g (1 1/2 lb) chicken mince 1 teaspoon paprika 1 - 2 teaspoons chopped red chilli (optional) 3/4 cup (60 g/2 oz) fresh breadcrumbs 1 egg, beaten 2 tablespoons chopped fresh lemon thyme or chives 6 slices of Cheddar cheese (optional) 30 g (1 oz) butter 1 -2 cloves garlic, crushed 6 crusty bread rolls lettuce, tomato, extra sour cream, pickled cucumbers and sweet chilli sauce, to serve
Fry the onion in a bit of the oil over medium heat until golden. Drain the onion on paper towels and cool slightly. This is where it gets messy. Wash you hands completely and then get ready to mix with your fingers. In a large bowl join the onion, chicken mince, paprika, chilli, breadcrumbs, beaten egg, lemon thyme and some salt and freshly ground black pepper. Mix it well using your hands. Divide the mixture into 6 equal portions and shape into round balls. If you want a cheese burger then press a piece of cheese into the centre of each ball and mould the mixture to completely enclose the cheese. Flatten the balls slightly and shape to make chicken burger patties. Heat the butter and 1 tablespoon of oil in a large frying pan. Add the garlic. When the mixture is foaming, add the patties, pressing with a spatula to flatten slightly. Cook over medium heat for about 3 minutes on each side, or until the patties are nicely browned and the meat cooked through. If you put cheese in the middle then the cheese should be melted. Cut the bread rolls in half. Toast if you prefer and spread with a slight butter. Fill the rolls with lettuce and tomato slices, a chicken patty, sour cream, some pickled cucumbers and sweet chilli sauce.

Lebanese Garlic Lemon Chicken

Here is a delicious chicken recipe that comes from Lebanon. This, easy to make, chicken recipe does not rely upon complicated ingredients and techniques. The only trick to give you a tasty dinner that your family will enjoy is the slow cooking and the special lemon and garlic marinade.





Ingredients:





For the Chicken





4 Skin-on, boneless chicken breasts


2 Fresh Lemons completely juiced


6 cloves garlic


1 tsp Salt


1 tsp Pepper


1 tsp Basil


1/4 tsp Cayenne Pepper


6 large potatoes cut into 1/4 inch thick slices





For the 'thoom' marinade (Arabic for garlic)





4 cloves of garlic


1/2 cup olive oil


1/4 cup lemon juice


1/4 tsp salt


a dash of cayenne.





Directions:





Blend the lemon juice, basil, garlic, salt, pepper, and cayenne pepper to make the marinade.





Plsce the chicken breasts in a deep pan or bowl and pour the marinade over it making sure that all of the chicken is covered. Put a lid or cover on the container and let it sit in the refridgerator over night. In the morning turn the chicken over or move the breasts around. Let the chicken marinate for approximately 4 more hours.





Preheat your oven to 375 degrees F (190 degrees celsius). Drain the liquid (but do not discard it) from the chicken and bake it in the preheated oven for 15 minutes. This is not to cook the chicken but only to brown it.





Next pour the marinade back over the browned chicken and cover the pan tightly with aluminum foil (Be careful not to burn your fingers!). Put the chicken and marinade back into the oven and reduce the heat to 250 degrees F (120 degrees celsius).





Baste the chicken with the marinade sauce every hour for three hours. After 4 hours add the potato slices to the pan and baste the chicken and potatoes well. Recover with the aluminum foil and bake for one more hour.





At this point you may blend all of the ingredient listed for the thoom. This will be used as a condiment for the chicken and potatoes.





Traditionally, this Lebanese Garlic Lemon Chicken is served with warm pita bread.

Summertime Chicken Sandwich on French Bread With Dill and Garlic

Toasted French bread style rolls spread with a soft cheese, dill weed and garlic spread. Topped with chicken breasts sautéed in oil with dried dill, and minced fresh garlic. Sandwiches are garnished with tomato and flat leaf lettuce. This is a great sandwich for lunch or dinner. Serve with your favorite soup.

Cook's Notes:
The chicken breasts could be grilled instead of pan sautéed. Brush the breasts with oil, coat with dill and minced garlic and grill over direct heat.

Bread Pan

Summertime Chicken Sandwich on French Bread with Dill and Garlic

Ingredients:

Cream Cheese Spread:
1 (4 ounces) package Cream Cheese, softened
2 teaspoons Dried Dill Weed
2 tablespoons Minced Fresh Garlic

Chicken Sandwich:
2 tablespoons Unsalted Butter, softened
2 teaspoons Dried Dill Weed
2 tablespoons Minced Fresh Garlic
1 tablespoon Vegetable Oil
2 Boneless, Skinless Chicken Breast Halves
1 small Plum Tomato, diced
Flat Leaf Lettuce
4 French Bread Style Sandwich Rolls

Cream Cheese Spread:
1. Add cream cheese, dill and minced garlic to medium bowl.

2. Stir to combine. Set aside.

Chicken Sandwich:
1. Add 1-tablespoon butter to large skillet. Heat over medium heat.

2. Season chicken breasts with dill weed and minced garlic.

3. Add 1 tablespoon to a large skillet. Heat over medium heat.

4. Cook 8 minutes per side, or until chicken is firm, browned, and juice run clear.

5. Remove chicken from skillet. Set aside to rest.

6. Spread remaining 1-tablespoon butter on one side of each bread slice.

7. Toast bread, butter side down, in clean skillet or grill pan.

8. Spread cream cheese on bread slices. Place chicken breasts, lettuce, tomato on cheese spread.

9. Top with bread slices.

How Long to Cook Chicken Wings

People really love to eat chicken wings. There are so many ways to prepare chicken wings and they make fantastic appetizers and party foods. One of the questions I am often asked is, "How long to cook chicken wings".

Chicken wings can be cooked using several different methods. I prefer deep frying wings but you can also pan fry your wings or bake them. Let's take a look at each method and you can decide for yourself which method is best for you.

Bread Pan

Before you cook your chicken wings you will need to make sure they are completely thawed. This can be accomplished by letting them sit in the refrigerator for a day or two before cooking. When you are ready to cook your wings, rinse them in cold water and pat them dry with a paper towel.

If you will be deep frying your chicken wings be sure they are dry before placing them in the hot oil to avoid painful splatters. Heat your oil to 375 degrees. Once the oil is hot you can begin cooking your wings. Fill the fryer basket with a single layer of wings. You want the oil to just cover the wings when lowered into the oil. Lower the wings into the oil slowly and cook for 12 to 15 minutes. This will make a nicely browned chicken wing that is crispy on the outside and juicy and tender inside.

You may also opt to pan fry your wings if you do not have a deep fryer. This would be my second choice. Use a large frying pan for this method. Pour enough oil in the pan to cover the bottom. Heat the oil over medium-high heat. When the oil is hot place your wings in a single layer into the hot oil. Cook the wings for 6 to 7 minutes and then turn them over to cook for another 6 to 7 minutes. You could also use a wok to fry your wings. This will also make a nice crispy outside and tender inside.

My least favorite method of cooking chicken wings is to bake them. Baking them is a much healthier alternative to all of the frying but the wings will not be nearly as crispy. However if you need to bake your wings heat the oven to 400 degrees. Place the wings in a glass baking dish that has been coated with a little non-stick cooking spray. Bake the wings for about 30 to 40 minutes. You want to be sure the juices run clear from the wings.

Well there you go three methods to cook chicken wings. Always remember to wash your hands and all utensils when working with raw chicken. Enjoy those tasty little treats.

Cooking Tips - Pan Frying Chicken

If you are new to cooking chicken or to the pan frying method, you may feel hesitant to try making a pan fried dinner without assistance. Perhaps you have already given it a try but it didn't turn out how you expected. There are a few common mistakes that pan frying novices make, but these are easily remedied with a few simple cooking tips. Knowing these hints to pan frying will help you cook great tasting chicken every time.

Tip #1: Don't turn the stove on high. When pan frying chicken, many people burn the outside breading while the inside remains undercooked. If you've had this problem in the past, the temperature on your stove is too high. Try pouring your oil into the pan and starting with a medium heat. The oil should be heated and should shimmer, but should not smoke. A medium heat around 350 degrees F will allow the chicken to cook longer, heating the inside completely while achieving a golden brown crust.

Tip #2: Pound the chicken to an even thickness before frying. Another common problem is uneven cooking throughout the chicken. With chicken breasts, part of the cut is usually thicker than the other, which causes one end to cook faster and possibly overcook and become dry. To avoid this, pound the thicker part of the chicken so that the thickness is even with the thinner part of the cut. This will ensure that the chicken cooks evenly and remains juicy throughout.

Tip #3: Keep the chicken dry before breading. When you are ready to batter and bread the chicken, first dab your chicken with a paper towel. Removing the excess moisture allows your batter (usually egg) to adhere to the chicken better. When you are ready to bread the chicken, let the excess batter drain from the chicken. Too much egg could cause the breading to fall off in the pan, so allow the egg to just thinly coat the chicken before dipping it in the breading.

Tip #4: Turn the chicken as little as possible. Each time you turn your chicken from one side to the other, you risk disturbing the breading. This could cause the breading on your nicely coated chicken to fall off in the pan. Turning also increases the time it takes for the chicken to cook completely. Turn your chicken at most two times when pan frying to avoid these common problems. If you find yourself turning the chicken more than a couple of times to keep it from burning, your stove temperature is likely too hot. Check the temperature of your oil with a thermometer and adjust it to 350 degrees F if necessary.

Tip #5: Keep space between your chicken. Whenever pan frying chicken, always keep at least an inch of space between the pieces in the pan. If the chicken is crowded, the oil will take longer to heat and may result in soggy, undercooked chicken. The breading on the chicken could also stick together if pieces are touching. Spread your chicken throughout the pan so that oil can heat and cook your chicken from all directions.
