Bread flour contains more protein than all purpose flour, meaning when you cook your bread with bread flour it makes stronger, fluffier and larger loaves. Ensuring you use bread flour also means the bread will be healthier for you and have more beneficial effects.

If you often have problems with the bread having wrinkled tops there is a great solution for your problem. Adding 2 teaspoons of rye flour for every cup of flour you use in the recipe will stop the tops of the bread from having a wrinkled top and make it look better.

When adding the ingredients to the bread machine, you must ensure you add them in the right order every time. Commonly the best way to do this is to either pour all your liquids into the engine first, then add the solids, then the yeast. Or you can do it in reverse, by first adding the yeast, then the solids, then all your liquids. The speculate for this is that moisture of any kind activates the yeast, thus if the yeast mixes with the liquids before the bread has even started cooking its going to make a bad tasting loaf.

Always ensure you use water that is at room temperature when cooking your bread. If hot water is used in the cooking it will speed up the yeast too much causing the bread to rise too quickly and overcook. Using very hot water will wholly kill the yeast.

The last tip I leave for you today is always keep the bread engine manual and any data booklets that came with the machine, these booklets often include great tips and info for using the bread engine to make the best tasting bread ever. Also when using your engine use a surge protector in the middle of it and the wall, as bread machines computer chips are very sensitive to voltage fluctuations and as such if a surge hits the engine it could scramble the system.

Bread Pudding Mexican Style

Bread pudding is a classic recipe and there are lots of different ways to make it. Bread pudding is great if you have some stale bread to use up but you can use fresh bread if that is all you have. Bread pudding is a hearty, warming dessert and it tastes amazing. Serve it alone or with some whipped cream or ice cream.

Bread pudding is often enjoyed during Lent in Mexico because it is made with French bread soaked in syrup with cheese, raisins, walnuts, and sugar. The syrup is usually made with water and piloncillo, which is a Mexican brown sugar, as well as nutmeg and cinnamon for flavor.

Lent is about giving up these foods for forty days and nights, so making bread pudding is a great way to use up whatever you have left in the pantry. You can also add fruit to the recipe if you have some fruit, which is past its prime. Bananas, papaya, or mangos would work nicely.

There are different types of pudding recipes to choose from and some might contain different fruits or spices. If you cannot get piloncillo, then you can substitute white or brown sugar instead and the flavor will be very similar.

Recipe for Capirotada

What you will need:

1 cup drained pineapple chunks 1 cup raisins 2 tablespoons butter 1 lb loaf white bread 2 cups water 2 cups sugar 10 cinnamon sticks 3/4 cup chopped walnuts 4 oz Colby Longhorn cheese

How to make it:

Preheat the oven to 350 degrees F. Mix the sugar and cinnamon with the water in a pan and bring the mixture to a boil. Let it simmer for fifteen minutes, and then set it aside. Toast the bread. Butter each slice on one side and arrange the toast in a big casserole dish in one layer. Sprinkle nuts, pineapple, and raisins over the bread and then slice the cheese and use it to top the toast.

Repeat these layers until you have used all the bread. Make the last layer a cheese layer. Pour the cinnamon mixture over everything and bake the bread pudding for half an hour. Take it out of the oven, let it cool for fifteen minutes, and serve warm.

Mexican Bread Pudding

This dish is often eaten during Lent, but it is a welcome dessert any time. It has been a traditional dish since the 1400s, though you may still find people who are unfamiliar with it. You can quickly set up this dessert to enjoy any night of the week or you can plan it for a special occasion. The flavor definitely warrants special treatment; this dessert is so delicious that you will want to serve it for special occasions.

One reason it has not caught on may be the combination of cheese with the sweetness. This combination actually works really well. Cheese has traditionally been paired with sweet items like fruit and candied nuts, so why not in bread pudding? In some parts of Mexico, they even add onions, tomato, and cilantro to the syrup. Like many other traditional recipes, there are many ways to make this recipe. You can look around and find many different variations. What You Need

1 2-foot loaf of French bread, cubed and toasted 2 cups brown sugar 2 cups water 1/2 teaspoon cinnamon 1/4 teaspoon ground cloves 1 cup Monterey Jack cheese, shredded 1 cup pecans, toasted and chopped 1/2 cup raisins 1/2 cup dried apricots, chopped 1/4 cup butter, melted

How to Make It

Preheat the oven to 350 degrees F.

Mix the sugar, cinnamon, cloves and water together in a saucepan. Reduce it to a syrup by boiling for 10 minutes or until it is the right consistency.

Grease a large cast iron skillet or 8x8 cake pan. Put half the bread in the pan and pour half the melted butter over the top. Toss to coat. Drizzle one quarter of the syrup over the bread. Toss to coat.

Layer with cheese, pecans, dried apricots, and raisins. Top with the rest of the bread. Drizzle with remaining butter and syrup. Mix the top layer slightly if necessary to make sure each piece of bread is coated in syrup.

Cover the pan with foil and bake for 20 minutes. Remove foil. Bake for 15 more minutes. Serve warm if possible.

Makes 8 servings.

Mexican Cooking Pots and Utensils - An Inside Look at Mexican Cooking

You might have been lucky enough to try real authentic Mexican food and, if so, perhaps some traditional Mexican pots or utensils were used in its preparation. Mexicans use different cooking methods, such as baking, deep-frying and slow roasting and they have pots and pans for these purposes. They also use a lot of fresh produce, including herbs and spices, so any Mexican kitchen will have plenty of sharp knives and a mortar and pestle.

A Look at Common Mexican Cooking Pots

Ollas, also known as Barros, are deep clay cooking pots. They are perfect for simmering beans, stew or soup and clay is a great medium for cookware because it distributes the heat evenly to avoid burnt spots. Barro means clay or mud and olla means pot. These cooking pots are fine to put over a direct flame all day long.

It is important to warm clay before using it or let it heat up as the oven does because it is sensitive to changes in temperature and might crack if exposed to heat suddenly. When you cook in clay, the food takes on a wonderful earthy taste.

A tortillero is a Mexican tortilla press. They are made traditionally from wood or, in modern times, cast iron. Some are made from aluminum but these tend not to last long. A tortillero has two round plates and you put a ball of masa between them to make a tortilla.

The Different Useful Mexican Utensils

You will find a metate y mano in most Mexican kitchens. This concave dish is the size of a platter and made of stone or rock. It will have three short legs and sit on the table or three long legs so you can sit up to it on a chair. There is a big, round stone, which you roll on the surface to mix together or grind the ingredients.

A molcajete y tejolote is a Mexican mortar and pestle. This little wood, stone or clay bowl has a matching cylindrical tube with rounded ends, which is used to pulverize your ingredients when you roll it around in a circular motion.

A molinillo is a wooden whisk, which is spun between your hands in hot chocolate to make it foamy on top. These can be highly ornate or plain. Most typical Mexican food can be made with regular equipment and utensils but using traditional Mexican cooking pots makes the cooking process more enjoyable and authentic and they look great displayed in a Mexican themed kitchen.

Mexican Cornbread Recipe - Best Mexican Cornbread

A wonderful South of the Border cornbread featuring cheese, cream style corn and jalapeno peppers.

2 (8.5 oz.) pkgs. corn bread/muffin mix

1 medium onion, chopped

2 cups shredded Cheddar cheese

1 (14.75 oz.) can cream style corn

1-1/2 cups sour cream

4 eggs, beaten

1 (4 oz.) can green chilies, chopped

1/3 cup vegetable oil

1 tablespoon jalapeno pepper, finely chopped

Directions

Preheat oven to 350 degrees. Lightly grease a 13x9x2-inch baking dish.

In a bowl, combine the corn bread mix and onion. Combine the remaining ingredients. Add to the corn bread mixture just until moistened. Pour into the prepared baking dish.

Bake for 50 to 55 minutes or until lightly browned and the edges pull away from the sides of the pan. Serve warm. Refrigerate leftovers.

1 (15.25 oz.) can whole kernel corn, drained

1 cup all purpose flour

1 cup cornmeal

1/2 teaspoon baking soda

3/4 cup fat free milk

1/4 cup canola oil

1 cup shredded reduced fat Cheddar cheese

1 (4 oz.) can green chilies, chopped

Directions

Preheat oven to 350 degrees. Prepare a 9-inch square baking dish with nonstick cooking spray.

Place the corn in a food processor or blender. Cover and process until coarsely chopped. Set aside.

In a bowl, combine the flour, cornmeal, baking soda and salt.

In a small bowl, combine the egg, egg whites, milk and oil. Stir into dry ingredients just until moistened. Add the cheese, chilies and corn.

Pour into the prepared baking dish. Bake at 40 to 45 minutes or until a toothpick inserted near the center comes out clean. Serve warm.

1-1/2 cups cornmeal

1/2 cup all purpose flour

6 tablespoons sugar

2 teaspoons baking powder

1 teaspoon salt

1 cup buttermilk

1/4 cup olive oil

1 to 3 jalapeno peppers, seeded and finely chopped

Directions

Preheat oven to 400 degrees. Grease a 9-inch square baking pan.

In a bowl, combine the cornmeal, flour, sugar, baking powder and salt.

In a separate bowl, whisk the eggs, buttermilk and oil. Add to the dry ingredients and stir just until moistened. Stir in jalapenos. Pour into the prepared baking pan.

Bake for 20 to 22 minutes or until a toothpick inserted near the center comes out clean. Cut into squares or wedges. Serve warm.

Traditional Mexican Recipes For Bread

Mexicans love their bread recipes and perhaps you have been lucky enough to try some authentic Mexican bread. Cornbread is perhaps the best known type of Mexican bread and this goes beautifully with a Mexican soup recipe or stew recipe. It is perfect for dunking in chili con carne and equally good served as a dessert with honey poured over it.

Bolillos are one of the most popular breads sold in Mexican bakeries. This bread is baked on the bottom of the oven, to give it a crunchy, thick crust. Puerquitos are fun, piglet-shaped breads made with a piglet-shaped cookie cutter. The main ingredients in this bread are milk, sugar, molasses, and wheat flour.

Sweet Mexican Breads and Pastries

Feite is a sugary bread, made by alternating butter and dough layers. When it is baked, the moisture trapped between the layers fluffs the feite up. Pan fino is always found in a Mexican bakery. This is a cinnamon-flavored, soft bread. It is shaped by hand so comes in all different shapes. It might be frosted or filled with fruit.

Conchas, which literally translates to mean, "shells," are also very popular. These sugar-rich buns come in all colors including pink, yellow, white and brown and they contain eggs and butter. They are made by hand and then covered in a sweet paste. They look like shells because of the design on top. Recipe for Authentic Mexican Bolillos

This easy bread recipe makes thirty six bolillos. These Mexican buns smell gorgeous while they cook and they are incredible when served warm from the oven. You do not need a bread machine or any special equipment for this simple Mexican bolillos recipe.

What you will need:

6 cups sifted all purpose flour
1 package active dry yeast
1 teaspoon salt
1 3/4 cups warm water
2 teaspoons white sugar
Oil or melted butter, for greasing
Extra flour, for sprinkling

How to make them:

Combine the sugar with the yeast and then stir in the warm water. Add the salt and then beat in four cups of the flour gradually. Add the rest if necessary, until the dough becomes too stiff for stirring.

Turn it on to a lightly floured cutting board and knead the dough for about ten minutes or until it is smooth. Put it in a lightly greased bowl and turn it so it is greased all over. Cover the bowl with a kitchen towel and let it rise somewhere warm for an hour or until it doubles in size.

Punch the dough down and let it double in size again. Cut it into thirty six pieces and shape each one like a flattish ball with twisted ends. Arrange them a couple of inches from one another on a floured baking sheet and slash the tops using a sharp knife.

Cover them again with a towel and let them double in size again. Preheat the oven to 400 degrees F. Grease the tops of the rolls, using a pastry brush, then bake them for twenty five minutes or until they are golden brown.
