Coming in at the lower end of the market the Oster 5838 breadmaker has a compact, simple design with an intuitive control panel, 3 step programming capable of 3 different loave sizes up to 2 pounds, a keep warm feature, 13 hour preset and 18 bake settings capable of bread, jams and gourmet dough and 3 crust shade settings.

Out of the box it comes with a manual containing over 50 recipes. At this price range you won't find all the bells and whistles like automatic ingredient add-ins collapsible paddles etc but the Oster 5838 breadmaker is more than capable of doing all the basics well.

The user reviews, while not fantastic, are generally positive, with most people complimenting both the appearance and taste of the bread it produces. This however, seems to be dependant on how closely the standard recipes included in the manual are followed.

If you're the adventurous type who likes to experiment with your recipes then be prepared to fail more often than you succeed with the Oster 5838. Like any bread maker though, sometimes it just takes a while to get to know what works well and what doesn't with the individual unit.

The main consumer complaints seem to be around the quality of bread produced and mostly from people who have owned other breadmakers before this one. Again, this could be down to people not following the standard recipes closely enough.

Some Basic Cooking Tools

I am moving, and in doing so need to construct a temporary kitchen at the new house, while maintaining one at the old house, so I started thinking - what does one really need for a functional kitchen?

One of the cooking tools I couldn't live without is my set of pans. OK - whats in a pan?? well, first of all the weight - you need a heavy gauge anything for it to be realistic. A really great pan is heavy, it has weight in your hand, that weight, or substance is usually stainless steel or cast iron. I hate nonstick pans, my feeling is if you cook properly and season a cast iron pan well you'll be fine without the nonstick surface. So, what does a basic kitchen need?? I love cast iron, well seasoned it is a wonderful heavy cooking surface for just about anything. I keep several skillets in my kitchen. I dedicate one to seafood, one to omlettes and one to regular dishes. I have small, medium and large cast iron pans. I have cast iron that was my great grandmothers, and so well seasoned you never need to oil it. I have brand new cast iron from some cook shop in berkeley ca that my husband carried for miles to get to the car, he complained, but it was worth it - heavy and wonderful in every size my cast iron skillets are the pans i reach for most!

* 2 10 inch skillets (you'll use this pan most frequently so you should invest in two - a stainless steel skillet with sloping sides and a cast iron with steeper ones

* a 4 quart soup pot, including a lid. Make sure to get a heavy bottom (copper encased is great) to allow for high heat and prevent scorching

* 1 8 quart pot with a lid for boiling pasta, this is essential!! Pasta needs room to cook plus you can always use it as a stock pot

* two 2 1/2 quart pans for sauces, vegetables, mashed potatoes, rice etc

* 9x13 inch baking dish - for yorkshire pudding, lasagna, ziti etc (pyrex is best)

* 8x8 inch pyrex dish (for brownies, etc)

How to Make Nana's Old Fashion Banana Nut Bread

If you want to relive those days of enjoying Banana Nut Bread at Nana's house, this recipe is for you. It is easy to make and taste like Nana's.

NANA'S OLD FASHION BANANA NUT BREAD

Bread Pan

5 tbsp butter
1/2 cup granulated sugar
1/2 cup firmly packed brown sugar
1 large egg
2 egg whites
1 tsp vanilla extract
1 1/2 cups very ripe mashed bananas
1 3/4 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
1/4 tsp baking powder
1/2 cup heavy cream
1/2 cup chopped walnuts

Preheat oven to 350 degrees. Lightly grease a 9-inch loaf pan; set aside.

In a large mixing bowl, with an electric mixer at medium speed, beat butter until light and fluffy. Add granulated sugar and brown sugar beating well. Add egg, egg whites, and vanilla beating until well blended. Add the banana and beat on high speed for about 30 seconds.

In a medium mixing bowl, combine the flour, baking soda, salt, and baking powder. Add the flour mixture to the creamed mixture alternately with the cream, ending with the flour mixture. Stir walnuts into the batter.Pour bread batter evenly into the prepared loaf pan. Bake at 350 degrees about 1 hour and 15 minutes or until a wooden toothpick inserted in the center comes out clean. Cool in the pan on a wire rack for 10 minutes. Remove bread from pan and finish cooling on the wire rack. Slice and serve.

NOTE: Cooled bread can be wrapped tightly in plastic wrap and served the next day. This is also a way to give a good food gift. Wrap in plastic wrap and add a pretty bow that fits the occasion.

Whole Wheat Bread and Nut Loaf Recipes

Whole Wheat Bread

1 pint milk, or milk and water

Bread Pan

2 tablespoons molasses

2 tablespoons shortening

2 teaspoons salt

1 yeast cake

1/4 cup lukewarm water

About 6 cups whole wheat flour

Scald milk and shortening together. Let cool until lukewarm. Add salt and molasses. Dissolve the yeast cake in the lukewarm water, and then add to the milk and shortening mixture.

In a large mixing bowl, combine flour with the first mixture. Stir in well. Knead until smooth and elastic. Cover closely and allow dough to rise until it has doubled in bulk.

Divide the dough into two portions and form the two portions into loaves. Place loaves in greased bread pans. Allow them to rise again until they have doubled again in bulk.

Bake at 350 degrees for 45 to 60 minutes.

Tips

When baking whole wheat bread, the dough should be a little softer than for white bread. The baking time is also a little slower. Also, if using dry yeast, almost twice as much time must be allowed for the rising as compared to using compressed yeast.

Nut Loaf

2 cups ground mixed nuts

2 3/4 cups bread crumbs

1 cup milk

1 cup tomato juice

2 eggs

1 1/2 teaspoons sage

1 tablespoon ground onion

1 3/4 teaspoons salt

1/3 teaspoon pepper

Combine all ingredients in the order listed. Let stand for 30 minutes. Shape into a loaf. Place in a well-greased bread pan. Bake at 375 degrees for 40 minutes.

Tomato Bread is a Passion in Barcelona

Visitors to Barcelona will soon find that the locals have a passion for 'Pa amb Tomaquet', also known as 'Pan con Tomate', sometimes 'Pan a la Catalana', or simply, in English, 'Tomato Bread'. If you wonder how such a sophisticated people as the Catalans can get excited about so basic a dish, simply try it in Barcelona. Not only will you enjoy it, you'll also be on your way to understanding what makes this great city tick.

'Pa amb Tomaquet' is, at its most basic, a slice of country bread with ripe tomato squeezed and pressed on to it, finished with some olive oil and a little salt. For those used to eating the tasteless red fruits that emerge from Dutch hothouses throughout the year, the appeal will be elusive.

Try a real tomato from the Mediterranean, a sensational taste in its own right, and then combine it with a bread that's more than a cut above Mother's Pride, and the appeal becomes clearer. Add a touch of garlic, a good quality local olive oil and sea salt, and everything drops into place. This is real food, Barcelona food!

You can now add a little mystique to the mix. Catalans will debate endlessly whether the bread should be a fresh country loaf, or one that's a day old, or even older. Then there is the question of who does the work. Should the 'Pa amb Tomaquet' be assembled by the restaurant or bar staff, or should the ingredients be brought to the table so you can do the work yourself, exactly as you know it should be done? Debates can go on endlessly, all adding to the interest of this simple dish.

Surprisingly, 'Pa amb Tomaquet' hasn't a long history that goes back many centuries. It's thought to date back only to 1800's - it was mentioned in an 1884 cookery book - but its origins are unclear. Leopold Pomes, who wrote the definitive 'Theory and Practice of Bread with Tomato' in 1984 claims it was invented by a painter who wanted to combine the colours of the sunset on an edible base! This sounds fanciful and others reckon it was more likely a local looking for a tasty way to use up the previous day's bread and a glut of tomatoes.

What we do know is that the tomato first came to Spain in the 16th century. It originated in Peru and soon found it's way to Spain on the galleons bringing back the gold and silver of the New World. It was called the 'Golden Apple' in south west France and, curiously, this name has stuck in Italian - Pomodoro.

For several hundred years, the tomato was simply a decorative plant as it was thought to be poisonous! It was, however, the Spanish who first dared use it in cookery. Before long it spread across the Europe and became the basis of cuisines all around the Mediterranean, and further afield such as in Hungary.

Next time you are Barcelona, do try some 'Pa amb Tomaquet'. It won't be hard to find. Once you are aware of this simple dish, avoiding it will be more of a problem! As you eat it, perhaps accompanied by a local botifarra sausage, or perhaps goats' cheese, or anchovies, ponder how such a simple dish can be so good, and how a piece of bread rubbed with a ripe tomato can create so much debate. It may well be one of the 'gastronomic' highlights of your city break in Barcelona.

How to Bake Really Good Bread

I love bread. I love eating it, smelling it, and I love baking it. The first bread I ever baked was cinnamon buns. My grandmother is a baker and I must have eaten a couple thousand of her famous (in my family) cinnamon buns by now. I got the recipe from her and happily set about my first attempt at baking. Everything went fairly smoothly. The mixing and the kneading. Even got the right ratio of cinnamon to sugar. When I pulled the buns out of the oven they seemed a little flat. Then when i went to bite into one I discovered that it's hardness rivalled that of a hockey puck. A quick look in the cupboard revealed that I had used icing sugar instead of flour!

So now you're wondering what I'm doing writing an article about baking really good bread after such an auspicious initial attempt? Well, I went back the next day and tried the cinnamon buns again. That attempt was far more reminiscent of what my grandma pulls out of the oven and I was hooked.

So just what is really good bread? The variations of bread are staggering and I'm sure there are as many opinions about what constitutes good bread as there are members of Facebook. I have to admit that, while I enjoy soft, white bread straight from the oven, I have been bitten by the sourdough bug. I happen to think there is something amazing about starting with flour and water and growing a culture that lifts and adds flavor to the finished loaf.

Baking bread from scratch is a very satisfying experience for me. I enjoy the transformation of what is essentially an inedible foodstuff (flour) into a loaf of bread whose textures and flavors bear no resemblance to the basic ingredients. I love the feel of dough, and i think the smell of fresh bread is proof that God loves us.

So what do you need to bake the kind of bread I think is Really Good? Here's a quick list..

- Big non-metal mixing bowl

- Mixing Spoon

- Kitchen Scale

- Cookie Sheet or Baking Sheet

- Plastic Wrap

- Serrated Knife

- Oven

That's it. You do not need big fancy machines. Nothing with timers or crust darkness settings. If you've never tried it I would recommend making bread from scratch totally by hand. In this world of working on computers and business, it can be soothingly therapeutic to create something with your hands.

I won't go into the specifics of getting a natural starter going but I have had a lot of success using the starter described in Baking Across America by Maggie Glezer. She uses a firm starter and that's worked for me so that's what I've stayed with.

Baking with a natural starter takes longer. Commercial yeast is much quicker at doing what it does. The good thing about the process taking longer with natural leavening is that it takes time for flavors to be drawn out of the grain. Of course you can make a loaf of bread in a couple of hours, but it will resemble a naturally leavened loaf, which takes 18 hours from initial mixing to coming out of the oven, in the same way that a supermarket tomato compares to an heirloom tomato. It doesn't. Every part of the loaf will be different. The crust, the crumb, everything really. Really good bread has a crisp crust which comes from it baking on stone with steam added at the start of it's time in the oven. It is baked free form so must be shaped as opposed to being dumped in a pan. The bread rises significantly in the oven, so much so that it needs to be slashed before baking to prevent cracking.

There are plenty of good resources out there for learning how to bake this kind of bread. Look for books by Jeffrey Hamelman, Peter Reinhart, or Maggie Glezer.

It's really not that hard. I'm not an accomplished bread baker by any stretch of the imagination and I still turn out loaves of bread better than I could find at 98% of the bakeries I've been to in my life, and I've been to Paris.

I really think that Wonder Bread is a symbol of everything that is wrong with our culture. Instant gratification, zero substance. Bread as a metaphor for life is an interesting idea which I won't explore here but I think it speaks to the connection between bread and people throughout the last 8000 years of human history.

So go ahead. Live a little. Spend some time making some really good bread. Your taste buds and state of mind will thank you.

How To Choose The Perfect Bread Maker

Bread makers are extremely popular. The average person can make delicious, homemade bread quite easily with a bread maker. Even with the ease of a bread machine, you must still use caution when adding the ingredients, even if you use a mix. You can make a variety of shapes and sizes of loaf with a bread machine. Many people use a bread machine to simply mix the ingredients then bake the loaf in a traditional oven. Choose a bread maker that will alert you when it is time to add additional ingredients such as fruit or nuts. You will also want a "keep warm" feature in case you are gone when the bread is finished. Look for crust control features and special setting for fruits, nuts, cheese, and vegetables.

Study the warranty very carefully to make sure you will be able to get service and replacement parts if necessary. Keep in mind that if your family consumes a small amount of bread now, once you purchase your new bread maker that consumption is likely to increase dramatically. Choose a slightly larger size that you anticipate needing. Remember that the keep warm feature is great, but if you leave the loaf in the bread maker for an extended period of time it may become soggy and flat. My Chanukah Miracle

I look forward to Chanuka every year - giving gifts to the grandchildren, having dinner with the family, and eating lots and lots of latkes. But I don't look forward to making the potato pancakes! Each year I try, in vain, to make perfect pancakes or at least better ones than the year before. But it's a struggle.

My Mother, G-d rest her soul, made great latkes. However, she cooked them while we ate dinner, jumping up from the table every few minutes to turn over the potato pancakes or to bring us a fresh, hot batch. I, on the other hand, wanted to sit with my family during dinner. This meant I had to fry my latkes before my guests arrived. Unfortunately, well you know how the saying goes, "The best-laid plans of mice and men......"

The first time, I made potato pancakes, I fried them early in the afternoon then put them in the oven at a low temperature to keep them warm until dinner. But when I pulled them out of the oven I looked with dismay at my pitiful latkes. They had turned black! The following year, after frying the latkes, I put them in the refrigerator instead. I was delighted that they didn't turn black. But, the oven temperature to reheat the latkes was too low and we ate luke-warm potato pancakes.

Another year I decided to simply buy my latkes from the Pancake House. It certainly was a lot less work, the house didn't reek of oil, and they tasted good. But, still, they weren't as tasty as my Mother's recipe. Then a friend told me that when she lived in Chicago, she bought potato pancakes at a Polish market. The pancakes were packed in a bread pan on their sides, in an upright position. In addition, the instructions were to reheat them at 425 degrees for 10 minutes. "Great," I thought I could do that and lo and behold I finally made a decent batch of latkes for my family. Though, bless their hearts they always said, "Oh Mom, they're fine."

Thus, this year I was prepared to enjoy a "stress-free" Chanukah. I even bought Yukon Gold potatoes so that I didn't have to peel them. But when I took the oil out of my cupboard, I was frustrated to discover that I only had a small amount left in the jar. I quickly drove to PDQ to buy more and began again as soon as I returned home. I grated the potatoes, squeezed out all the excess water (the trick for really good latkes), heated the pan, and started frying the latkes.

When I finally finished making my potato pancakes, washing the dishes, and cleaning the kitchen, I breathed a sigh of a relief. And as I replaced the cover on my original bottle of oil, a huge smile broke over my face. A small amount of oil remained in the bottom. What a Chanukah coincidence. I had thought I wouldn't have enough oil, but..... I did!

Seen at the time as a frivolous novelty, nowadays it's hard to imagine opening cans without them (especially since nobody can remember where the old-fashioned hand crank opener is). Following close behind it was the coffeemaker, taking over from the percolator that used to sit on a burner of the stove. And its close cousin, the teakettle. Machines like the blender were first developed for commercial use, and quickly found their way into domestic service.





The next big advance in kitchen technology was the microwave oven in the 1970's. It was to kitchens what the VCR was to the living room - revolutionary in itself, it can now be seen as the beginning of a whole wave of gizmos to be lined up beside the sink. Soon afterwards, the market exploded with toaster ovens, sandwich grills, pasta makers, ice cream makers, yogurt makers and the like. This reached a zenith with the advent of the food processor. Seen as a sort of companion to the home computer (a.k.a. the "word processor", since nobody could think of any other use for a computer in the days before the web), these kings of the counter top combined blender, grater, masher, slicer, dicer and a few more things all in one package.





Right on the heels of the food processor was the bread machine. 3 Unusual Bread Recipes

Western people love bread, although not everybody eats it because it is fattening. Eating too much bread is fattening, but good bread is very satisfying, so there is no need to over indulge, which means that it does not have to become a burden on your waist band. These recipes are intended to be mixed and cooked in a bread making machine, but they may be mixed by hand as well. I have used a bread making machine for years, and I used to make it by hand, and I can honestly say that I can not tell the difference between them.

Furthermore, the machine saves a great deal of time and because it cooks on a timer, you can wake up to fresh bread each morning, if you want.

Recipe 1

Celery Bread

1 sachet yeast

1/4 teaspoon ginger

1/4 teaspoon sugar

3 cups Better for Bread flour

1/2 cup quick-cooking oats

2 tablespoons gluten

2 teaspoons celery seeds

1 1/2 teaspoons elery, garlic or onion salt

3/4 cup celery -- fresh / slice thin

1 tablespoon celery leaves, fresh / chopped

1 egg

10 3/4 ounces cream of celery soup

1 tablespoon vegetable oil

3 tablespoons warm low-fat milk

Combine all ingredients and cook

Recipe 2

Citrus Bread

2/3 cup water

2 cups white bread flour

1 teaspoon dry milk

2 teaspoons sugar

1 teaspoon salt

1 teaspoon butter

2 tablespoons orange marmalade

2 teaspoons lime juice

1 pinch lemon peel

2 teaspoons yeast (active, dry)

Mix all ingredients and bake.

Recipe 3

Chart House Squaw Bread

1 1/4 cups warm water

2 tablespoons molasses

1/2 teaspoon caramel coloring * -- optional.

1 1/2 teaspoons malted barley flour **

2 cups bread flour

1/2 cup whole wheat flour

1/2 cup unprocessed bran or wheat bran

1/4 cup dark brown sugar (3 TB)

1 1/2 tablespoons oatbran

1 1/2 tablespoons rolled oats

2 teaspoons granola

1 1/2 teaspoons salt

2 1/2 teaspoons yeast (1 envelope)

Oil and / or butter are not required.

* Caramel colouring was only used to give the bread an almost pumpernickel colour. You can get it in a cake decorating store.

** The malted barley flour is also called diastatic malt powder.

In a bowl combine bread flour, whole wheat flour, unprocessed bran, dark brown sugar, oatbran, rolled oats, granola, malted barley flour and salt.

In bread pan add water, molasses, and caramel colouing. Add flour mixture; top with yeast and select dark bread setting.

NOTE: Raisins could be added if liked. If you do, do not add the caramel colouring and blend the water, 1/4 cup raisins, molasses and brown sugar before adding to the machine.

9 Pans That Every Baker Should Know

If you are ready to tackle any baking project it is important to have a range of tools in your baking arsenal. My baking pans are the back bone of my baking operation.

It is important to note that baking pans are made of metal, not to be confused with baking dishes that are traditionally made of glass. I prefer to use pans for baked goods. Most newer baking pans come with a non-stick surface, making them much easier to clean.

Bread Pan

Here is a breakdown of the pans I keep handy in my cupboard.

Springform: This unique pan is actually two pieces. Round in shape, the pan has a locking device on one side that will release the base of the pan, making cakes easier to remove. This clever device is great for cakes that are too delicate to be turned over, like a cheesecake, torte or flourless cake. The separate parts are also great for easy clean up.

Muffin: Also known as a muffin tin, a muffin pan is unique in shape. It features circular craters up to 2 inches deep that are used for baking mini-cakes (or muffins!). The pan usually comes with slots for 6 or 12 muffins and is also perfect for baking cupcakes!

Bread: The bread pan is easily recognizable by its "loaf" shape. The rectangular shape helps the loaf rise while it is baking. This pan is ideal for making Dassant beer bread, or pumpkin bread.

Bundt: The Bundt pan is all about presentation. This oddly shaped pan is used for baking decorative, fluted cakes. The tubed center allows for even cooking while the carvings on the side of the pan create a unique, decorative cake.

Tube: The tube pan is much like a Bundt pan without the fluted sides. The walls are a bit taller, but the circular cake still cooks evenly. This pan is commonly used for Angel Food Cake.

Baking Sheet: A baking sheet is flat, with short sides that keep food from sliding off. Also known as a sheet pan, the baking sheet is generally used for cooking baked goods. The pan comes in lighter or darker shades of grey. Darker shades will create a crispier end product.

Cookie Sheet: Unlike a baking sheet, a cookie sheet is completely flat. There are no sides. Cookie sheets are often mistaken for baking sheets, but the open sides ideal for scraping cookies off as they have finished baking.

Pie: This shallow circular-shaped pan has slanted sides for easy removal of pie pieces.

Tart: Unlike a pie pan, a tart pan has straight sides. Like a Springform pan, the bottom of the pan is often removable. The pan sometimes has fluted sides, but also comes in a smooth variety. The tart pan creates a taller, less slanted shape than the pie pan.
